Padprik Ayam Diana

Ingredients :

1 chicken ~ cleaned and cut to small chunks (I used fillets)
4 shallots - minced
2 garlic ~ minced
1 onion ~ sliced
2 lemon grass ~ bruised
2 tomatoes ~ quartered
5 bird eye chillies ~ minced (you can add more if you wish)
lime juice
5 kaffir leaves
green beans
young corn
chillie sauce
tomato sauce
oyster sauce
sweet soya sauce
salt if necessary

Method :

1. Heat the wok. Add in a bit of oil. Add in the chicken chunks/fillets. Fry till cooked.
2. Add in the minced shallots, garlic and bird eye chillie. Fry till fragrant.
3. Add in the chillie sauce, tomato sauce, oyster sauce and sweet soya sauce. Let it simmer and add a bit of water.
4. Add in the lemon grass and kaffir leaves together with all the vegetables.
5. Finally add in the onion and tomatoes.
6. Squeeze some lime juice just before serving.7. Serve with with plain white rice.


Bahan-bahan :

1 ekor ayam ~ dibersihkan dan dipotong kecil-kecil (Mama gunakan isi ayam)

4 bawang merah ~ ditumbuk
2 bawang putih ~ ditumbuk
1 bawang besar ~ dihiris
2 serai ~ dititik
2 tomato ~ dibelah 4
5 cili padi ~ ditumbuk (boleh ditambah jika hendak lebih pedas)
jus limau kasturi
5 daun limau purut
bunga kobis
kacang buncis atau kacang panjang
jagung muda
sos cili
sos tomato
sos tiram
kicap manis
garam jika perlu

Kaedah penyediaan :

1. Panaskan kuali dan masukkan sedikit minyak. Gorengkan isi ayam hingga masak. Jangan terlalu garing.

2. Masukkan bawang merah, bawang putih dan cili padi yang telah ditumbuk.
Goreng hingga wangi.

3. Tambahkan sos cili, sos tomato, sos tiram dan kicap manis. Biarkan didih. Masukkan sedikit air.
4. Masukkan serai, daun limau purut dan sayur-sayuran. Biarkan masak.
5. Akhir sekali masukkan bawang besar yang dihiris dan juga tomato.
6. Perah jus limau sebelum menghidang.
7. Hidangkan bersama nasi putih.

Adapted from via Mak Lang

Ingredients :

1 3/4 cups flour
2/3 cup sugar
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
1/2 teaspoon salt1 egg
1/2 cup cooking oil
1/2 cup plain yogurt
1 teaspoon vanilla essence
1 cup mashed ripe bananas (I used 4 medium sized ripe bananas)
3/4 cup chocolate chips

Method :

1. In a large bowl, sift flour, baking powder, bicarbonate of soda and salt. Add in sugar. Mix using a whisk.
2. In another bowl, combine egg, cooking oil, plain yogurt and vanilla essence.
3. Make a hole in the middle of the sifted dry ingredients. Pour in the egg mixture. Using a whisk, stir until just mixed. Do not overmix. Mixture will be crumbly.
4. Add in mashed bananas and chocolate chips. Mix lightly.
5. Spoon into the muffin pan lined with paper cups.
6. Bake in a pre-heated oven at 170 C for 15 to 20 minutes.

Bahan -bahan :

1 3/4 cawan tepung gandum
2/3 cawan gula
1 sudu teh serbuk penaik
1 sudu teh soda bikarbonat
1/2 sudu teh garam
1 biji telur
1/2 cawan minyak masak
1/2 cawan yogurt plain
1 sudu teh esen vanilla
1 cawan pisang lenyek (mama gunakan 4 biji pisang bersaiz sederhana)
3/4 cawan chip coklat

Kaedah penyediaan :

1. Di dalam mangkuk yang besar, ayakkan tepung, serbuk penaik, soda bikarbonat dan garam. Masukkan gula dan kacau menggunakan whisk.
2. Di dalam mangkuk yang lain, satukan telur, minyak masak, yogurt plain dan esen vanilla.
3. Tuangkan bancuhan telur ke dalam bahan kering dan gaulkan sekejap sahaja
menggunakan whisk. Bancuhan akan kelihatan berketul-ketul.
4. Masukkan pisang lenyek dan chip coklat. Kacau sebentar sahaja.
5. Sudukan ke dalam acuan muffin yang telah dialas dengan cawan kertas.
6. Bakar di dalam ketuhar yang telah dipanaskan terlebih dahulu pada suhu 170 C selama 15 hingga 20 minit.

Sambal Lonte


Ingredients :

6 red chillie a few bird eye chillie ~ for extra hot or shall i say heat!
2 shallots
2 garlic
a handful dried anchovies
shrimp paste

Method :

1. Slice red chillie, bird eye chillie, shallots and garlic. Fry for a few minutes till softened.
2. Fry the dried anchovies and the shrimp paste.
3. Pound everything and ready to eat!

Paella (Spanish Rice)


Ingredients :

500 g Basmati rice
2 chicken fillets ~ cubed
200 g fillet steak ~ cubed
200 g prawns ~ shelled, deveined and washed
1 each green and red pepper ~ diced
1 teaspoon green chillies ~ crushed
100 g green onions ~ finely chopped
1/4 teaspoon turmeric
1/4 teaspoon saffron
2 cubes chicken stock or homemade stock
salt and pepper to taste
1 teaspoon garlic ~ crushed
1 cup oil
100 g parsley ~ finely chopped
2 tablespoon lemon juice

Method :

1. Cook the rice with tumeric, saffron, chicken stock, 1/2 cup oil and salt to taste. Once done, leave aside.
2. Fry individually the steak and chicken cubes with the salt, pepper, green chillies and garlic.
3. Stir-fry the peppers in a tablespoon of oil.
4. Similarly fry the prawns in 2 tablespoons oil with the lemon juice.
5. To the cooked rice, add the stir-fried chicken, steak, prawns, peppers and toss lightly.
6. Decorate with chopped green onions and parsley. Serve hot.

Note :

1. I didn't cube the chicken and steak, but sliced it.
2. Didn't put any prawns.
3. Green and red pepper = green and red capsicum
4. Green chillie, I think cili padi
5. Green onions, not sure????
6. Didn't put saffron because I don't have any. Naseem said, it's for color and flavour as well.
7. Psst...I used cube chicken stock..hihihi
8. Didn't put parsley, not available in the house.
9. To give an extra tangy hot taste, I ate this Paella with Nando's sauce..yummy!
