Chocolate Waffles


Jumaah Mubarak to all. May Allah make all your efforts sincere, grace them with acceptance and reward you for all your good deeds in both worlds.

How would you feel when you see your dear husband and your kids really enjoying the meal that you've prepared with loads of love? Well, for me, when I look at the kids enjoying their meal, I felt overjoyed that all my time and effort didn't go to waste. And when looking at hubby enjoying his meal and at times even sipping the soup till the last drop, makes me feel touched and relieved dan yang sewaktu dengannya. I felt that I had done my duty as a wife. Huhuhuhu... here comes Mrs Sentimental huh. But honestly, that's how I felt. And if he had accompanied that gesture with words, like....sedapnyaaaaaa mama masak..... then I'm gone! Shot up to Cloud 14! Why 14, that's my birthdate! Hahahaha... As for the kids, they will always thank me after each meal. It's their habit. And Syahmi even has his own line of words that he'll say.....

...THANK YOU MAMA FOR YOUR LOVELY DELICIOUS SCRUMPTIOUS FOOOOOOD....

even if it's only just fried Ayamas Chicken and plain rice. That's how my boy is. As for my girl, she compliments me more by gesture. If I see her kept going to the kitchen to dig for more food, then I'll give myself the credit! Hahaha.... I'd rather not ask, because then, she'll say..

... IT'S OK OK LAA....

and if she can't stop eating, then she'll blame me for making her fat! Ada patut ke? Hahaha....

Anyway, all that adds to the lovely part of MamaFaMi's life..... Alhamdulillah.....

Oki doki, recipe to share today is this Chocolate Waffle that I made last Monday. Served to the tuition teacher and Iddin, Syahmi's best friend who joined the class recently. Thank you to Laura of Real Mom Kitchen for sharing the recipe with all of us...



CHOCOLATE WAFFLES

1 1/4 cup flour
2 tsp. baking powder
1/2 tsp. salt
5 Tbsp. sugar
1/4 cup cocoa powder
1 cup milk
2 eggs, separated
1/4 cup oil
1/4 tsp. vanilla

Beat egg whites until soft peaks for, set aside. Sift all dry ingredients together (or whisk them together). Beat egg yolk in another bowl for 1 minute, then mix in milk, oil, and vanilla. Combine the dry ingredients with the milk mixture. Stir only until blended. Fold in egg whites. Cook in waffle iron. This will make 4 Belgian waffles. I also have a Mickey Mouse waffle iron and I can get 9 waffles from there.

Besides the tart casings, I had a few orders for cupcakes as well. Thank you to Nora and Sal for trusting me with the cupcakes though I am just an amateur trying to act clever... hahaha... at least, I ACTED huh MrsJ? Kih kih kih.... jangan mare aaa, nanti kena jual!!!

Roti Paun (rnana)


Love at first sight.... Yes, that was what happened to me the day before. Oh no, don't get me wrong. I am not in love with anyone else but my dearest husband, but I fell in love with someone's bread photo in his blog. Thanks Bro Rozzan for making my curiosity reaches it's maximum level. I just had to try this recipe. What's more, Bro Rozzan had mentioned in his blog, he hasn't tried the recipe just yet and welcomes the feedback if anyone had tried it out. To me, that sounds like a challenge. I love healthy challenges. So yeah, I copied the recipe and off to the kitchen. That was almost Maghrib time. Placed everything in the bread maker and off to pray my namaaz. Then sent Syahmi to his tuition class. After my dear Bread Maker is done with it's job, I removed the dough from the pan and shape it. Arranged it in the tray then covered it with a clean plastic bag. Then fetch Syahmi with hubby. From there, we went to Giant to get some groceries and stopped by the restaurant to have supper. I've totally forgotten about the dough! Hahaha... I guess, I must have enjoyed my supper or maybe the outing that much! When we reached home, it was 11pm. When I checked on the dough.... wow... don't they just look too beautiful to be baked! Haha... gebus, montok, putih, mulus you..... Heated the oven and placed the tray in. The aroma that came out of the oven, I guess, will be like a torture to the neighbours! Hahaha... so sorry guys! Once the bread is done, though I am full with the supper, I just can't resist to enjoy one bun while it's still hot.....and you can just imagine how heavenly nice it is to eat a bun just out of the oven....

ROTI PAUN

Ingredients :

1/2 cup luke warm water
1 egg (large)
300 g flour
80 g sugar
20 g milk powder
1 teaspoon instant dried yeast
1/2 teaspoon bread softener
1/4 teaspoon (heap) bread improver
1 tablespoon margarine



Method : (using Bread Maker)

1. Pour the lukewarm water into the bread maker pan. Add in egg.
2. Add in flour, sugar, milk powder, instant dried yeast, bread softener and bread improver.
3. On the bread maker to Dough setting. (This setting will takes about 1 1/2 hour to finish it's cycle.)
4. Once the dough is just combined, add in the margarine. Let the BM continue it's process.
5. After about 1 1/2 hour, remove the dough from the pan and divide to 63g each. Make into round balls and leave to rest for 10 minutes.
6. Grease a 9 x 9 inch pan with margarine and coat with a bit of flour. Remove the access flour.
7. Shape the balls again and place them in the prepared tin. Wrap the tin and let the dough prove again. In my case, I left it for more than 2 hours. (Actually, according to rnana, the original recipe calls for a 2 hours proving. So I guess, it's a good thing I had forgotten about the dough in the first place! Hahaha)
8. When the dough is double the size, bake in a preheated oven at 180 C for 20 to 25 minutes.
9. Once out of the oven, brush with margarine for a shiny effect.


Verdict : Simply delicious. And my rolls stayed soft till the following night!

Steamed Muffins


A good actor or actress can't do good acting on his or her own. They need good allies to carry out the task. Why am I writing about about acting? Am I into acting now? Read on......

Last Friday, I had the chance to meet one of the blogger, let's just name her MrsJ. Met her when she attended a class at Lea Oven. I knew she's going to join the class and had planned ahead with Lea and the rest of her team. Told them not to call me MamaFaMi when MrsJ is around, but address me as somebody else. When I reached her premise, I brought along some steamed muffins but I didn't bring it inside the class. Instead, I asked Lea's shop assistant to bring the container in, after 10 minutes with a message saying...mamafami just dropped off the cakes. She's in a hurry as she has to rush home to settle a few chores. After passing the 'dialogue' to the girl, I innocently and politely knocked on the class door. The way Lea had to control herself from laughing... you have my sympathy Lea dear. Hahaha.... But I guess I acted really well. Everybody was actually smiling here and there when the thought tickles them, but I maintained with my character. The soft spoken and cool lady. MrsJ didn't suspect a thing. And Lea carried her role pretty well. After 10 minutes, in came the muffins with the message from MamaFaMi. And yes, MrsJ starts talking about MamaFami, with me by her side, just to hear the story. Hahahaha....

Finally Lea signaled to me, asking me to reveal myself as she can't take 'the torture' anymore. When I gave her a green light signal, Lea asked MrsJ if she recognised MamaFaMi's voice if she hears it and MrsJ said yes. Then asked again, does this lady's (me) voice sound like MamaFaMi? And MrsJ said No because MamaFaMi does not have a 'kepit' voice! HAHAHAHA....am I that loud? Oh gosh, this is embarrassing!!!! When Lea asked MrsJ to call MamaFaMi, and the phone in my pocket starts ringing... oh my goodness, how MrsJ kept beating me with all her heart! Hahaha... Sorry MrsJ. I didn't mean to pull a prank on you. It's just that I want to introduce myself in the most 'stylish' way that you will never forget me. Hahaha... You are such a sport MrsJ. I love your friendliness! To Lea and the team....kudos to all of you for a job well carried out!!!! Thank you!~ Big round applause to all..... *clap* *clap* *clap*

Okay enough excitement for one day....Now let's move on to the recipe to share. I had tried steaming this muffin the day I went 'acting' at Lea's place. Got the recipe from Mak Lang Azie, but I've changed the recipe slightly just to give more colors to it, and with Mak Lang's consent that is. Thank you Mak Lang for sharing this lovely recipe with all of us....







STEAMED MUFFIN

Ingredients A :

2 cups evaporated milk (I used fresh milk)
1 cup cooking oil or 250g melted butter (I used cooking oil)
1 3/4 cups castor sugar
1 egg

Ingredients B : to be sifted

300g superfine flour
1 teaspoon baking powder
1 teaspoon bicarbonate soda
Essence : Durian, Strawberry, Yam and Pandan
Food coloring : yellow, pink, purple and green

Method :

1. Mix A using a whisk.
2. Pour B into A and mix well.
3. Spoon the mixture into the prepared cups layered with papercups.
4. Steam for 10 minutes in high temperature.

Just for the sake of updating....

Hello everyone...

I am pretty tight up these couple of days with schools, tuitions, monitoring man at work, orders and best of all, trying hard to put the house in order! Hahaha... That shows... my house is something like 'tongkang pecah' huh? Maybe I am exaggerating a bit. Actually I am trying to lessen the stuffs that I've been stuffing in the house. I just have to have a strong will power to get rid of things that I don't really need. Will I have that will power? Oh please pray for me!

Anyway, just not to let my blog be without any updates, let me just post the photos of our lunch yesterday. Sorry all, no new recipes for today ya. Will keep it for later. I have to do some cuppies deco now. Yesterday night, managed to bake the cupcakes and also some tart casings for Eena. Till then, take care and have a nice day.....

Pau


Hubby got all excited when he saw the advertisement in Astro about the Astro Beyond, featuring the High-Definition thingy in the television technology. He called Astro to subscribe. And yes, we had our Astro Beyond last Saturday. The picture quality is really awesome. If only they are showing the movie AVATAR at HBO HD, I will try not to miss watching it. It would be lovely and mama will once again venture in her own world of fantasy! Hahaha....

Just now, while I was doing my 'work' on my laptop, they, hubby and Syahmi were watching National Geographic HD. They were showing about SNAKES! Of all the four channels that Astro Beyond is offering, why on earth these two boys chose that channel to watch and of all the creatures in the world, it has to be snakes!!! Just imagine how the snakes look like on HD channel..eeeyouuuu.... I had to put on headphones and played some music at high volume to distract myself from thinking of that slimy thingy they were showing on TV. I hope none of the boys will have nightmares tonight!!!

The above paragraphs were composed yesterday night. Had to stop, around 11pm to go out dating with hubby, just for a drink. Ooo I'm loving that! It's not what we had, but it's the precious time together. *wink* *wink* Anyway, if you're wondering, I had limau nipis ais and hubby had teh-o limau panas.... no food, just drinks...

Enough said, let's move on to the next topic. Recipe! For this entry, I will post the recipe of another pau which I came across when visiting Along Roz's Blog. And she got it from Baking Mum's Blog. Thanks to both ladies for this simple and nice recipe. Allow me to re-post it here for others to try.


PAU

Ingredients :

400g Hongkong flour (pau flour)
200g water (I added more)
70g sugar
a pinch Salt
10g double action baking powder
7g instant dried
30 g shortening


Method :

1. Place water in the bread maker pan. Top it with Hongkong flour, sugar, salt, baking powder and instant yeast.
2. Set the bread maker to Dough and let it knead.
3. When the dough is combined, add in shortening and let the bread maker finish it's job of kneading and proving which will take about 1 1/2 hour.
4. Remove from pan and punch the air out. Cut the dough weighing 30 g each. Make it into round balls and leave to rest for 10 minutes.
5. Flatten the dough and wrap the red bean filling.
6. Place each pau on a piece of paper or small piece of banana leaf.
7. Arrange in the steamer and let it proof again.
8. Steam for 15 minutes.

Lemak Cili Api Ayam


ALLAH IS GREAT....

This morning, I received a text message from hubby's niece, Azie, asking if I have any extra tart casings that she can buy for her mom. Since she and her hubby, Ewan are in Kuala Lumpur, they thought they'd drop by and collect the tart casings if I have any in stock. And they are in luck as I have one extra container of 50 pieces tart casings to spare them. Since they'll be reaching our place around noon, I told hubby that I am inviting those two for lunch. Just as I've said out my intention to hubby, Iddin, Syahmi's friend came by our house with his mom Saey, with a container full of fettucine in white sauce. Alhamdulillah. I haven't even started cooking for hubby's niece and hubby, but ALLAH already 'paid' for my good deed. ALLAH HU AKBAR!

Thank you Saey for the yummy fettucine.

These were what I had served for Azie and Ewan. Thank you for dropping by Pak Long's and Mak Long's house and for the lovely water chestnuts that they've brought along and that will be well enjoyed by me, of course! Hahaha...


Thanks to Zai for being my 'talian hayat' when trying to cook this following recipe. To some, it's not a big deal to prepare this meal... as easy as ABC but not to me! Hahaha... Here's the recipe....


MASAK LEMAK CILI API AYAM

Ingredients :

1 small chicken, cleaned and cut to small pieces
9 red eye chilie (more if you like it hot)
2 inches fresh turmeric
sea salt
thin coconut milk
thick coconut milk
2 stalks lemongrass ~ bruised
2 fresh tomatoes ~ halved
2 potatoes ~ cleaned and quartered
1 piece dried tamarind slice

Method :

1. Blend red eye chillie, fresh turmeric and sea salt to a paste.
2. In a pot, add in chicken, potato, blended paste, lemongrass and thin coconut milk.
3. Simmer on medium heat. Stir once in a while until the chicken is almost cooked.
4. Add in tomatoes, thick coconut milk and the tamarind slice. Let it boil till the chicken is fully cooked.

Udang Cili Madu 3


MADU...
There are a few meanings to this word in Malay. One of it is HONEY, produced by the bees and most enjoyed by Winnie The Pooh. Hahaha.. just kidding. All of us likes honey and it seems, honey contributes something towards health care. If you've been following my fotopages when I first started, then you surely have read the goodness of "Cinnamon and Honey" in there.

Another meaning is second or maybe third or fourth illegal* legal wife. (*Thanks Lin for pointing out my mistake. Taip lepas tengah malam, manalah tak keyro!) This, for sure, is not to the liking of most women. Everytime when this Madu 3 is being mentioned, I will always remember a film directed by the most talented artist in Malaysia, Allahyarham P.Ramlee, MADU 3. I love to watch all of his comedy movies but not the sad ones. When watching Madu 3, I can never fail to smile, not only because the movie is funny, but also, I can never forget my hubby's reaction when he watches this movie, especially the part when the second wife said," Saya kooooorek biji mata awak"... Hahaha....

Why am I writing about madu today? It's because I wanted to post this dish that I had tried a couple of days ago. Dug it out from Ummi's 'garden'. Ummi's garden is full of juicy stuffs, always ready to be plucked! Hahaha... Thanks Ummi and Kak Mon for this lovely prawn recipe. Thousand apologies if the photo doesn't do justice to your recipe, but that's the best that I can do.... at the moment...... Allow me to translate (though with broken English... hahaha) the recipe and re-post it here so that hopefully, many more will be able to try it....


UDANG CILI MADU 3

1 kg tiger prawns ~ I used whatever prawns available in my freezer

To be blended :
5 shallots
5 cloves of garlics
1/2 onion
5 fresh red chillies
1 piece candlenut (buah keras)

Ingredients for sauce :

3 tablespoons Thai Sweet Chillie
3 tablespoons Lingam Chillie Sauce (I used Life chillie sauce, from the KFC sachets)
5 tablespoons chillie paste
1 tablespoon oyster sauce
3 tablespoons honey
juice from 2 limes
salt to taste
cooking oil
spring onion for garnishing

Method :

1. Heat cooking oil in a wok and add in the blended ingredients. Fry till fragrant.
2. Add in all the ingredients for sauce and continue cooking on medium heat.
3. Add in prawns, honey, line juice and salt. Cook for 5 minutes.
4. Remove from heat and onto the serving plate.
5. Sprinkle with some chopped spring onions and ready to serve.

Donut Lela


Human changes. They don't normally stay the same throughout their life span. We need changes, to bring more colors, more excitements so that life won't be dull and boring. But hopefully we change for the best not otherwise. I am one of them who had transformed from someone SO QUIET to someone who is so bubbly and so talkative. Those who knew me personally will surely be surprised to know that I had once been SO QUIET. They will surely have question marks in their heads..... boleh percaya ke mama ni SENYAP orangnya???...hahaha..... Well, that was who I am before I started doing my tiny consultancy agency back then in 1989.

My relatives used to say, it's like I have loads of diamonds in my mouth that I dare not open it. Fearing that all the diamonds will fall out of my mouth. And during semester breaks, my next door neighbours do not realize of my presence at home until I came out to throw the trash. And I had been in the house for almost a week! See...that's how quiet I am! Even my clients can see the difference. They said it themselves..."Ini amoi, dulu talak manyiak cakap. Sikalang sudah manyiak pandai cakap!" (Translation : This lady used to be so quiet before but now she talks too much!) Hahaha... I'm not offended but I take it as a nice compliment! Because I think positively... to me, that's a good change.. at least to my clients. They no longer feel like they are talking to the tree or to the wall! Hahahahahahaha.....

Yesterday, Syahmi's best friend Iddin, came to join him for a Bahasa Malaysia tuition class at our house. Since that was the first time Iddin's joining, so his mom came along. That was the very first time I met Saerah. They are our neighbour across the playground field. So near yet so far huh! Once the guys were settled with the tuition teacher, Saerah and me went into the kitchen as I was in the middle of experimenting a donut recipe. The way we chatted (of course, tried hard to lower the volume) made Cikgu Sherry's mind filled with a big question mark that she just had to ask us...."awak dua orang ni dah lama kenal ke?" (translation : Have you known each other for a long time?). Frankly speaking, that was just AN HOUR of knowing that she's Saerah and I am Syahmi's mom! Hahahahaha... After a while, we went out to Lea Oven's shop. I just want to introduce her to Lea's shop in case she wants to get any baking stuffs or maybe order some cakes in future. There, we were asked the same question by Lea...have you guys known each other long time? Hahahahaha.... See, how bubbly I can be!!! Anyway, I had a lovely day yesterday and it's really nice knowing you Sae. Next time we'll galavant somewhere huh.... *wink* *wink*

Recipe to share is this Donut recipe that I had kidnapped from Jun's Blog. Thanks Jun (psst I really love the song LOVE STRUCK on your blog. Makes me feel like wanting to do some aerobics! About time too I guess! Hahahaha) and Lela for sharing this recipe with us. Made the whole recipe and managed to distribute to 4 houses excluded mine! Allow me to translate it and repost it here so that many others can give it a try ya..... Thank you lovely ladies.....


DONUT LELA

Ingredients :

2 big potatoes ~ peeled, cut to small pieces, boiled and mashed
3/4 cup lukewarm milk
2 egg yolks
4 tablespoon sugar
1 teaspoon vanilla essence (I added)
500g all purpose flour
1 tablespoon instant dried yeast
3 tablespoons margarine

Method :

1. Pour the lukewarm milk into the Bread Maker pan. Add in mashed potato, egg yolks, sugar and vanilla essence.
2. Top it with flour. Sprinkle the instant dried yeast on top.
3. Set the Bread Maker to Dough. Once the dough is just incorporated, add in margarine and allow the Bread Maker to finish it's process which takes about 1 1/2 hour including proving.
4. Remove from the pan, punch down to let out air from the doh. Roll to the thickness of 1 cm and cut using the donut cutter.
5. Arrange on a tray lined with plastic for easy handling. Leave for half an hour, covered.
6. Fry till golden brown. Coat with castor sugar or dip in melted cooking chocolate and sprinkle with toppings of your choice.





Let's get shaking girls and boys!!! Ini semua Jun punya pasallah ni... cannot stop listening... kepala dan punggung badan pun dah goyang-goyang ni... peluh pun dah start keluar tawww!

Cookies

Today is Friday the 8th January, 2010....
Happy Birthday to my cousin, Puan Karimah Ahmad...
Semoga akak dipanjangkan umur, dimurahkan rezeki, diberi kesihatan yang baik serta di dalam peliharaan dan rahmat ALLAH SNT sepanjang masa.... Amin.

Another person that I know who is celebrating his birthday today is Mr Adnan Ibrahim. Who is Mr Adnan Ibrahim? The brother of Anwar Ibrahim? Oh no no no.... Mr Adnan Ibrahim is a glamorous cook in this cyber world. Well known by the nickname of Mat Teko....ehhhhh... bukan bukan..... Mat Gebu. I am sure many of you are familiar with his blog, with such lovely food spread and the photo shots of his dishes which are brilliantly presented are simply superb. So Mat,

A VERY HAPPY BIRTHDAY TO YOU. MANY HAPPY RETURNS OF THE DAY!




And Mat, since it's very expensive to get all the nice 'teko's for you (especially for a person who has high taste) plus I don't want it to break in the delivery process, I hope these will do.... terimalah 'teko' dari ma, seadanya...






COOKIES

Ingredients :

250 g margarine
140g castor sugar
2 egg yolks
1 teaspoon vanilla essence
1/2 teaspoon baking powder
410g cookies flour

Method :

1. Sieve flour and baking powder. Set aside.
2. Cream margarine and sugar. Add in egg yolks one at a time. Add in vanilla essence. Continue beating.
3. Add sifted dry ingredients till a soft dough is formed.
4. Keep in the fridge for 30 minutes.
5.. Roll to the thickness desired. Cut using a cookie cutter. Arrange on a baking tray lined with greaseproof paper.
5. Bake in a preheated oven till golden brown. I used fan-oven at 150 C for 30 minutes.
6. Leave to cool completely before decorating with fondant or royal icing.

Carrot Cake


AAAAAAAAAAAAAAAAAAAAAAARGGGHHH.....
I am so exhausted. I am so tired. I just need to relax but that just sounded so impossible to my ears! Reality check... Yes, it is IMPOSSIBLE. I have loads of clothes to sort out, house to put back in order and documents to sort. How I wish I have a genie who can help me, just by snapping her fingers.... haha..... dream on mama....

Anyway, let me just roughly recall what I had done these couple of days. Last Thursday, brought the kids to IOI Mall to watch AVATAR. It's a nice movie with beautiful and colorful sceneries...making me feel like I am in there! The kids enjoyed the movie as well. Was planning to go and watch another movie the next day but I had adhoc orders from Nora. This is Nora's third time ordering from me and I don't mind helping her out even though given such short notice, because she's such a lovely customer. Not fussy at all, which makes my ideas flow easier. She had asked for 50 pieces cupcakes and a carrot cake. She just told me that she's taking the cakes to a party for her nephew who excelled in his PMR recently. Not specific design requested, alhamdulillah.... less stress less tense! That's for the cupcakes but not the carrot cake! I told Nora that I am not good at decorating a whole cake and I don't really know which carrot cake should I bake. But Nora said she's very confident that I'll manage! Funny, how people have great trust in me and I am still not confident with myself! Yeah...that's MamaFaMi for sure! I must go to a motivational camps huh? Hahaha....

So here are the cupcakes that I had baked for Nora and alhamdulillah she's okay with them..... I just love to see the looks on her daughter's and niece's face when they saw the cakes. Thanks again Nora for ordering and really hope that you're satisfied with the taste as well as the look... mama jual ye....





As for the carrot cake, I took the recipe from Rinn's fotopages. Thanks Rinn for the lovely recipe. When I tasted a slice, I said to myself... who said MamaFaMi doesn't like Carrot Cakes! *wink*



This cake weights about 2.4kg


CARROT APPLE CAKE

Ingredients:

2 1/2 cups self-raising flour
1 1/2 teaspoons baking powder
1 teaspoon bicarbonate of soda
1 1/4 teaspoons cinnamon powder
a pinch of salt
3 /4 cup brown sugar
3/4 cup castor sugar (or less)
4 eggs
1 cup corn oil
100g margarine ~ melted
200g grated carrots
150g grated green apples
30g roughly ground almonds

CREAM CHEESE TOPPING

250g cream cheese
4 tablespoons butter
1/3 cups icing sugar ~ sifted
1 teaspoon lemon juice

* Mix all the ingredients and beat till light and fluffy. Spread onto cake.

Method :

1. Sift flour, baking powder, bicarbonate of soda, cinnamon powder and salt into the mixing bowl.
2. Add in the rest of the cake ingredients.
3. Stir on slow for one minute and medium speed for another 2 minutes.
4. Grease a 9 inch baking tin with butter and line with greaseproof paper. Pour the mixture into the tin.
5. Bake in a preheated oven at 180 C for 45 minutes to 1 hour depending on your oven.
6. Once baked, leave to cool completely before spreading with cream cheese frosting.
