Apam Tepung Beras (EJ) *


It's been 3 days without any updates in my blog! Mmm, I thought I had just updated my blog yesterday! See how time flies.... or is it, I am the one letting time flew just like that? Truth is... whenever hubby is around , time is ever so jealous of me! Hadn't had the chance to stay long infront of the laptop since Friday. We were always in and out of the house... and I like it... Thousand apologies......

Anyway, here I am and will feed all of you with new recipe... but first and foremost, allow me to let this out.....
...YAHOOOOO... MAMA BEBAS DARI 'SUMPAHAN' ENO...

Phew... don't I feel good! I feel great! Hahaha... I've tried quite a number of Apam Eno, only to produce Apam Eno Chicken Pox, as I called it. The surface of the kuih apam is full of 'freckles'! I don't know where I went wrong but that's how it would be in each trial until I came across this recipe at Maz Bahrain's blog and decided to give it a try. She got the recipe from Zana's Fotopage who took the recipe from EJ's Fotopage. Phew, luckily EJ had forgotten where she got the recipe from or this will keep going on and on and on. Hahaha.... I made the right decision to give this recipe a try! When it's time to open the lid of the steamer, I recite Bismillahirrahmannirrahim for so many times before lifting up the lid. And what I saw in the steamer just made my day. But before that, I was actually really inspecting the kuih apam, to see if there are any freckles anywhere. And I am just so happy to see none. So thanks to the owner of the recipe, EJ, Zana and Maz for this wonderful recipe. It's indeed a keeper... thank you thank you thank you sooooo much all of you........ muahhh...

Here's the recipe which I had obediently followed without any alterations, adjustments or whatsoever. See.. I am a good girl, am I not? *wink*

APAM TEPUNG BERAS
Yields : 12 pieces

Ingredients :

100g rice flour (not sure what brand. I threw the plastic away. Must be 'gajah')
50g sugar
130g water
2g yeast (approximately 1/2 teaspoon)
2g ENO (original)
Food coloring

freshly grated coconut for garnishing (I omit this because I don't have it at home)

Method :

1. Mix rice flour, sugar, water and yeast.
2. Stir till sugar dissolves. Keep in an airtight container for at least 4 hours to ferment.
3. Get the steamer ready.
4. Add food coloring and ENO into the fermented mixture and stir lightly till well mixed. Leave covered, for 5 minutes.
5. Spoon the mixture into the prepared cups. Steam for 15 to 20 minutes.
6. Serve with freshly grated coconut.

Serabai

If you are dropping your child/children at the dropping zone in school, where exactly will you drop them? Will it be at the entrance? At the far side? At anyway you pleases? Well for me, I'll drop my child, the furthest empty space which will not block other people's way. This morning, we were slightly early than usual to school. So I managed to meet up with the traffic jam at the dropping zone. And oh, if anyone is wondering, YEAH, I SLEPT EARLY YESTERDAY NIGHT, AROUND 11 PM AND WOKE UP AT GOOD TIME, THANK YOU. Hahaha...

Back to the story, when it was my turn to turn into the dropping zone, these two cars infront of me, just stopped at the entrance, one on the right and the other on the left next to an already parked car which left me nowhere to go but to wait till they move. And the children took time to get out of the car! How inconsiderable can they be. Can't they see the long line of traffic waiting to get through! Not enough with that, on the way back, I had to follow one of the car, and she/he was driving leisurely on a fast lane! GRRRRRRRRRRRR.... don't make me angry, you wouldn't like me when I'm angry!!! Oh pleaseeee!!!! I hope I won't be that troublesome when on the road...... Hahaha..sorry all, I'm just letting out some steam here....

Now let's move on to something not stressful. Recipes! Mmm... but at times, they too tend to be stressful... hahaha... Anyway, this one wasn't. I was chatting with the ever famous chef at Sedenak, Mat Gebu a few days ago and he had asked me if I know about Serabai, a tradisional sweet. I was actually thinking of making serabai a few days before when I came across this recipe at MyResipi. I was remembering my late nanny at the same time. She was very good at making serabai and makes wonderful tastiest serabai. Too bad, I didn't get the recipe from her. But then again, the resipi that Delila posted at MyResipi is just nice. So allow me to share it with others. Thank you to MyResipi and Delila for the wonderful recipe. As usual, I did a few changes, to suit whatever's available at home.





SERABAI(for 4)

Ingredients :


500 g rice flour (Cap teratai, I think!!! Huhu...so sorry)
300 g cooked rice (to be blended with a bit of water)
1 litre coconut milk (lukewarm)
1 1/2 teaspoons instant dried yeast
salt to taste

Method :

1. Mix well, all the ingredients.
2. Set aside to ferment for at least 2 hours. The thickness is similar to Kuih Cara's bater)
3. Heat the serabai mould, I used a small non stick pan since I don't have the special mould and grease with a bit of oil.
4. Pour the bater 3/4 full into the serabai mould. Cook on small fire.



SYRUP
Ingredients :

1 cup brown sugar (I used gula timbang)
2 cups coconut milk
2 bananas - cubed
Salt to taste
2 screwpine leaves - knotted

Method :

1. Mix all the ingredients in a pot.
2. Cook till the syrup thickens.
3. Ready to serve.

To answer Queenjah's question, this is the pan that I had used to prepare this Serabai. It's non stick and easy to remove the serabai once it's ready.

Nasi Kebuli & Ayam Percik


Sometimes people are just too arrogant and too stubborn. Always thinking of themselves! But if that does not effect other people's life, then it's fine. What if it does. Won't they feel guilty and responsible for their action? I would and I had actually!

You must be wondering, who am I pissed off with today right? The answer is MYSELF! I had woken up as early as 6 am when the alarm went off. After settling a few stuffs, I said to myself, let me just lie down for a while before I wake Syahmi up. Yeah right, lie down it wasn't! I went back to sleep and only jumped out of the bed when the clock showed 7.12am! How we had to rush! Poor Syahmi just had a glass of milk instead of his usual cereal. And to make things worst, when we reached the school small gate, the prefect had just closed it. Syahmi had to use the main entrance. I felt really bad if he was punished because of my ignorance! Luckily he escaped any punishment. Alhamdulillah. Hubby had always told me to have enough sleep and yes, this naughty wife of his, tend to get carried away on the internet and had been sleeping past 1 am for two days in a row, hence the headache and tiredness. Well I guess I've learnt my lesson... for now that is. Will be sleeping early tonight.

Let me just share with you the recipe of this rice combo. 'Kidnapped' it from Ummi's Scrumptious Blog. Thanks to Ummi and the gang who had kindly share these lovely recipes with all of us. And since I am just too tired at the moment, I will just post the recipe without translating it, unless requested later on.


NASI KEBULI

Bahan-bahan:-


900 g beras - basuh dan toskan (Ummi sukat hanya 4 cawan beras basmathi)
2 biji kelapa parut (Ummi guna 5 cawan santan)
5 sm halia ~ diketuk
1 batang serai ~ diketuk
1 helai daun limau purut
2 biji buah pelaga
3 kuntum bunga cengkih
minyak ghee utk menumis

Untuk Hiasan:-

2 biji telur (didadar) - akak x buat pun
kismis
bawang goreng (untuk hiasan)

Bahan untuk dikisar :

2 sudu besar ketumbar
1 sudu teh jintan manis
1 sudu teh jintan putih
1 sudu teh lada hitam
2 sudu teh serbuk kunyit
Sedikit garam

Cara Memasak :

1. Kelapa diperah ambil santan secukupnya untuk masak nasi.
2. Panaskan minyak ghee,masukkan rempah-rempah, daun limau purut, halia, serai serta bahan giling dan masak hingga naik bau.
3. Masukkan santan & garam tunggu mendidih.
4. Masukkan beras dan masaklah hingga tanak nasinya.
5. Taburkan telur dadar, kismis & bawang goreng diatasnya bila menghidang.


AYAM PERCIK PASAR MALAM (Sajiemas,MyR)

Bahan-bahan :

2 ekor ayam
500 gm bawang besar
50 gm halia - diblender
50 gm lengkuas - diblender
50 gm bawang putih - diblender
5 batang serai - diblender
2 cawan gula
3 sudu stok ayam serbuk
5 senduk cili mesin
5 senduk cili sos
1/2 kg santan

Kaedah penyediaan :

1. Campurkan semua bahan dan dimasak sampai mendidih.
2. Apabila sudah mendidih, masukkan ayam hingga separuh masak.
3. Asingkan ayam dan siap untuk dibakar, kuah yang lebih disimpan untuk dicurahkan di atas ayam nanti.
4. Bakar dan siap untuk menjamu selera.

Apam Koko

.....at times, whatever I said I am able to do, turned the other way round... that will be revealed in my upcoming entry...

Well the story continues.... Sal had asked me if I could whip up something nice and soft for her to bring to her MIL's place. She suggested for Apam. And I confidently said Yeah Sure... sometimes my confidence is scaring me! Hahaha... A day before the collection date, I tried a new apam recipe. Well, that one didn't turn out nice. So I said to myself, let me just use the recipe that I've used before. And on THE day, I got to work. I was so upset with the outcome. Macam kena sumpah je mama punya kuih apam tu... huhuhu... Since I ran out of time, I just gave Sal to taste. Luckily besides the apam, she wanted some savory tarts. At least that saves the day!

When I came back home from sending the goodies to Sal, I saw my steamer on the stove and still not satisfied with the failure that I've just bitterly accepted, I went on the net and start browsing for new apam recipe. My 'hop' brought me to Am's Kitchen and chose Apam Koko among all the other apam recipes that she had served in her blog. Thank you Am for healing my disappointment for that day. And Ain, you're just the lucky ones to get both unfailed products. Ain had emailed me, whenever I am making anything for orders, just make a few extras for her to taste. So this is her first time tasting my food. Thanks Ain for the feedback. Alhamdulillah, glad you liked them... To Am, thank you so much for sharing this lovely soft apam recipe with all of us.... Allow me to share the recipe here.....



APAM KOKO

Ingredients :

2 cups flour
2 tablespoons (heap) cocoa powder
11g instant yeast
1 cup sugar
1 cup water



Method :

1. Sift flour and cocoa powder. Add in yeast.
2. Dissolve sugar in water and pour into the flour. Mix well.
3. Keep aside for 20 minutes to rise.
4. Grease the plastic cups with a bit of butter. Prepare the steamer.
5. Spoon the mixture into the prepared cups till full.
6. Steam for about 5 to 6 minutes. Remove from the steamer and ready to serve.

Savory Tartlets


My schedule had been pretty hectic for the past 2 weeks. That explains the lack of updates in this blog. At times, I have to steal some time to check my mails and at the same time, clicked on my blog just to see if it needs my urgent attention.... hihii... just to make it sound important, but the truth is, there's nothing much! Hahaha....

We came back from our holiday in Malacca last Wednesday. Hubby was on leave for the whole week. I'm loving it! If only he does not have to go to work, it'll be just great! Why? Because whenever he's around, I will be his faithful companion. Everywhere he goes, he'll ask me to go with him which I will obediently gedik-ally follow. Though at times, I am drained out towards the end of the day, but I just love it. Forget the tongkang pecah house for a moment and cheerish the makan angin time!

Last Saturday night we went to Big Plate, Shah Alam for dinner. Just to give the kids a treat, especially Fatin before she goes back to her hostel. This time, I ordered just the Kiddy's Meal. Why? I told hubby, let me have a small portion of my main course, so that I can 'help' them to finish up their leftovers, mainly vegetables! I just love the vegies! But when my fish and chips plate came, supposedly a small one, for kids that is, I was shocked to see the size! I told hubby, if this is the size for a kid, I am very sure the kid is an obes kid! Hahahaha.... Since I didn't expect my 'kiddy's meal' is of that size, I ordered Mushroom soup as well. Wow... they served the mushroom soup like how I had served mine before, in a dug up bread! Only thing, they didn't cheat. They actually served the soup in the bread where else I served the soup in a plastic container, then hid it inside the bread! Hahaha... I love the mushroom soup and also my BIG glass of watermelon juice! Yummyyyyy!!!! But honestly, this time round, we love the food served.....

Enough said, now let's move on to the recipe to share. I had made these savory tartlets for the first time, to fulfill Sal's order. Thanks to Ana for being my talian hayat. And thanks Sal for your continuous support and trust though at times, whatever I said I am able to do, turned the other way round... that will be revealed in my upcoming entry... stay tuned!


UNSWEETEND CRUST PASTRY

Ingredients :

240 g all purpose flour
45 ml cool water
150 g cold butter - diced
pinch of salt

Method :

1. Mix flour and salt.
2. Rub in the flour and butter to become breadcrumbs
3. Add in cool water and fold till well mix and turn to dough. Set aside for 15 minutes.
4. Press the dough into tart mould. Poke the base with fork.
5. Bake till done. Keep in airtight container and they will last longer.

MACKEREL FILLING

Ingredients :

1 big can of mackerel sardine - drained and crushed
1/2 big onion - diced or chopped
1/2 inch ginger - finely chopped
enough mayonnaise

sliced red chillies and chopped spring onion for garnishing

Method :

1. Mix crushed mackerel, onion and ginger in a heated pan untill the water dessolved.
2. Set aside to cool.
3. Mix well with mayonnaise before place them into tart shell.
4. Garnish with sliced red chillie and chopped spring onion.

Back from holiday!


Hi All....

Anybody misses me? Hahaha... as if! Keep dreaming mama! Anyway, to those who had emailed me asking about my silence, thank you so much. Alhamdulillah my family and I are just fine only still a bit tired. We were in Malacca since last Saturday and got back just yesterday evening. Had a wonderful time in Malacca and really sad to leave our parent's house...a house full of wonderful memories...

Besides not having internet connection in Malacca, I don't have my laptop with me. Fatin took over my laptop as her's had no sound. Huhu.. I hope we can fix it so that I can get back my laptop or otherwise will have to get use, using hubby's personal laptop, which is lack of so many softwares that I am using. To edit a photo, I have to use 2 online websites... what a job. But for the love of updating my blog, I just have to do it...

Anyway, since I have a house to put back in order, I'll just post the photos of the cupcakes I managed to prepare for ad-hoc orders, just before leaving for Malacca last Saturday. I do hope everyone is satisfied with their goodies... Thanks to Jid, Mimie and Natasha for your trust in me.....

Pau (Ani Ahmad)


Hello All...

Just when I thought I could just sit back and relax, something came up.. something pleasant that I just could not resist. So I'll be busy again today and will just omit the ramblings. Sometimes, less talk is better! Hahaha...

Anyway, here are the cupcakes that I made yesterday for Jid. She's such a darling. Always willing to let me do as I please... jangan sampai mama naik lemak dah ler Jid. She had asked for 3 boxes of simple designs to give her ex-neighbours. When she mentioned that one of them is a Chinese family, I had asked dengan tergedik-gediknya if I could deco the CNY theme. I had always wanted to deco that theme as I have never tried it before. I am quite satisfied with the cupcakes... especially the chumel apek and amoi! Lovely couple huh? Hahaha.....




And yesterday as well, I was given an 'assignment' by Mak Lang Azie to try out a Pau recipe. PAU LAGIIIII... Yeah, I don't mind trying as many pau recipes as possible because hubby and me loves to eat pau! Hahaha... But this recipe is definately a keeper. Thank you so much Mak Lang for continuously giving us wonderful recipes. May Allah bless you and your family... Allow me to share it with all of you.... with Mak Lang's consent of course....


HONGKONG PAU

Ingredients A :

450g Hongkong Flour (I used pau flour, are they the same? I dunno!!)
1 tablespoon condensed milk
5 teaspoons instant dried yeast
230ml water (I used lukewarm water. I used more than the amount stated here)

Method : (using bread maker)

1. Pour water and condensed milk into the BM pan.
2. Add flour and yeast. Set the BM to Dough function. You don't have to wait for it to finish it's cycle.
3. When the dough is smooth and soft, rest the dough for 30 minutes.

Ingredients B :

300g Hongkong flour (I used pau flour)
180g castor sugar
40g shortening
2 tablespoons double action baking powder
1 teaspoon bread softener
100 ml lukewarm water (you may need more)

Method : (Using bread maker)

1. Pour water into the BM pan. Add in sugar.
2. Add in flour, double action baking powder and bread softener.
3. Set the BM to Dough setting. When the dough is slightly incorporated, add in Dough A and shortening.
4. Leave the BM to do it's job.
5. When the dough is double the size, take it out of the pan and cut to 25g dough each. Make into small balls and leave to rest for 10 minutes.
6. Flatten the dough and place some filling in the middle and cover the filling.
7. Place the dough with the filling on a small greaseproof paper or better still, banana leaf, and arrange it on the steamer. Let the dough prove once again.
8. Steam on high heat for 5 to 7 minutes. DO NOT OPEN THE LID OF THE STEAMER BEFORE 10 MINUTES AFTER STEAMING.

Steamed Sandwich Layered Jam Cake


Kept telling myself, not to blog hop so much but I just never listen! I still do it repeatedly. Ended up, feeling happy with the loads of new found recipes but at the same time, stressed out because I don't think I'll manage to try all of them though I'd really love to. Why can't try all of them mama? The answer is, who's going to eat them all? My family is not that a good eater. They are not so adventurous as me...that explains the difference in our sizes. Them, in the range of S to M and me alone, in the category of above XXL! Hahaha... tak apa, janji hati senang dan tak menyusahkan orang lain, sudah!

But nowadays, I have to thank all the tuition teachers, my hubby's cousin's family, Iddin's family and Harith's family for being there for me. They are the ones who terpaksa are willing to be my food tester. I hope you guys won't be asking for an early retirement ya... I have lots of recipe still waiting to be tested... hahaha...

For today, let me just post this Steamed Sandwich Layered Jam Cake, recommended by Mak Lang Azie. I've made a few changes to the recipe to give more variety. Thank you Mak Lang for sharing the recipe with us. The cake turned out to be soft and yummy.



STEAMED SANDWICH LAYERED JAM CAKE

Ingredients
:

3 eggs (medium size)
1/2 tablespoon ovalette
30g water
100g castor sugar
100g self raising flour
20g milk powder
30g cooking oil
1 teaspoon vanilla essence
1 teaspoon chocolate emulco (I substitute with orange coloring)

Filling : Mango pie filling

Method :

1. In a mixing bowl, beat eggs, sugar, ovalette and water till thick.
2. Sieve the flour and milk powder. Fold into the creamed mixture.
3. Lastly pour in oil and mix well.
4. Take out 2 tablespoons of mixture and add the emulco. Mix well and pour into a piping bag.
5. Pour the plain mixture into the baking pan. Pipe straight lines with the colored mixture on top. Using a cake tester or a clean toothpick, make lines across the piped lines to give that zigzag effect.
6. Steam for 20 minutes.
7. Slice the cake into 2 pieces and spread the jam. Sandwich the cakes together and enjoy.

Meat Loaf & Story of a flower


Thank you so much for the feedbacks on the previous entry. I really appreciate each and everyone of it. And my apologies for dragging some of you into my world of curiosity! Hihihi.... Okay, here's the story behind the making of this flower... mmm I can now call it flower as most of you sees it as a flower and not sotong sutun.

I received an email from Am asking me if I am able to bake for her some cupcakes for her primary school re-union on the 6th February. Since I don't have any commitment on that day, so I said, why not...only if she does not mind my amateur deco. Then she gave me her list. She wanted :

25 carrot cupcakes...oh senanglah itu I think I should be able to cope with that, just pipe some carrot shape.. yes yes I can manage....phew what a relief!
and 25 chocolate cupcakes... oh ok, that should be easy.... and the theme is sun kacang je tuh...ok, I can do sun... and orchid....

WHATTTT? ORCHID? Huhuhuhu....how on earth am I going to do orchid! Am said, just do a simple orchid... huhuhu.. simple? Oh me oh my, now I AM in trouble. So I googled and found one youtube showing how to pipe orchids with buttercream. The way she did it, it looks easy. I said to myself... mama, take this as a challenge. Be confident and go for it. Mama can do it.... mak ai, cakap beriya, mentang-mentang dah lepas.. hahaha. On the 5th, I baked the cupcakes and iced them. I saved the best for last. Took a deep breath and started piping the so called orchids, my way. Had to adjust the method slightly to suit my comfort and wallah... ended up with the design shown in my previous entry. I'm kinda satisfied with the end result, but at the same time, wondering... will others see it as ORCHID? That's why I had put up the previous entry to see what others had to say. Before that, I had shown the photo to a few friends who came online and asked them what they think? And all of them said, it's ORCHID. You don't know how well I slept that night as I know that I've accomplished my mission. The only worry now is whether Am sees it as orchids or something else. I had sms-ed Am and said, if her friends said it does not resemble an Orchid, just tell them, this is THE RARE SPIECES! Hahaha... So Am, thank you for ordering from me and hope the cupcakes suit your taste.....





Specially for Am aka Epelijau and ex-students of Standard 6 Orchid...

And these are fast sale for Aisyah who bought these for her aunt to taste. If the taste is right, then she'll place her order, otherwise... thanks for buying these cuppies Aisyah..



As promised, I'll post a recipe that I've tried recently, to go along with the Burger Rolls that I've made. Non other than this Meat Loaf, promoted at Ummi's Blog. The recipe came from Chef Norzailina Nordin. Thanks so much to both chefs for the simple and lovely recipe. Though the photo of my burger is not as yummy looking as Ummi's but the taste is simply yummy! Allow me to re-post it according to what I've done based on whatever's available in the fridge.



MEAT LOAF

Ingredients :

400g minced meat
2 tablespoons meat curry powder
1 egg
60g breadcrumbs
1 cup pizza sauce (I used Kimballs Traditional spagetti sauce)
4 pieces sliced cheese
1 tablespoon blackpepper sauce
salt to taste

Method :

1. Mix minced meat, curry powder, egg, breadcrumbs, pizza sauce, blackpepper sauce and salt in a bowl. Mix well.
2. Pour half the meat into a loaf pan. Press the mixture onto the pan.
3. Arrange the sliced cheese on top and pour the rest of the meat into the pan.
4. Bake in a pre-heated oven at 180 C for 45 minutes.
5. Remove from the oven and let it cool.
6. Slice to serve with burger rolls, lettuce, tomato and just anything that you like.

Happy 71 st Birthday Mak

Today 5th February, 2010 is my mom's 71st birthday. Happy birthday MAK. May you stay healthy and cheerful always. May Allah's blessings be with you always.... Love ya....



Mak had been through a hard time last year. But because she has a strong will power and a real fighter, for those who never knew she had been sick once before, will never know about it. End of 2008, my parents came to stay with us as my mom had not been keeping well and can't drive my dad for his dylisis treatment. Not only that, she's not that strong to do the house chores as well. She was always on her oxygen machine. When she came to stay with us, she was in such a bad state. After a week, when we saw that her condition worsen, we adviced her to go for a check up at the hospital. My brother brought her to the hospital and she was admitted straight away. The next day, she fell into a coma. She was in that stage for 2 weeks. And my dad, whom was left at home, kept asking for mom. Both of them are very very very attached to each other. Where ever my mom is, you'll find my dad there as well. And when he didn't see his wife for a few days, I can see that he's loosig a part of his life. It is so painful for me to write this, but I just have to let it out. We didn't tell abah what had happened to mak, fearing that it'll come as a shock to him. Abah was fragile that time and we feared for the worst. After 10 days, hubby and me told my siblings that we think, we'll just have to take the risk. We have to bring abah to meet mak at the hospital. So we brought abah to the hospital that Sunday.

Since mak was all wired up, Abah didn't recognised her or maybe Abah just didn't want to accept that he's looking at his wife. Abah held Mak's hand for a long time. That was the last time he held her hands dearly for the following Wednesday, our dear Abah left us, forever...... I miss you Abah...

Mak regain her consciousness after two weeks. We dare not tell her what had happened. Then she started to get curious. What was I doing at the hospital looking after her in the mornings. Who's looking after her husband. Everytime she asked me, I'll divert her attention towards something else and since she's still under the influence of the drugs, she'll just forgot about her question. When we thought that she's ready to be told about the sad news, we had asked our Pak Busu and Mak Busu to break the news to Mak. When Mak Busu told Mak, she looked sad, just for a few minutes then she smiled. That was because, she's not fully aware just yet. And she decided to be fully awared and herself again, when it was my shift looking after her. She asked me, where is my Abah and when I tried the previous trick, she kept asking the same question with her eyes on me! Oh oh... am I in big trouble! Why must it always be me!!!!! Since I have no other choice, I broke the news, the best way I could. Mak is strong. I AM NOT! She just had tears in her eyes, but I had tears streaming down my face!

Anyway, that's a part of Mak's life. The woman with a strong will power, a fighter, a good mother and certainly a very good wife to a very good husband....

Burger Rolls

I had written the following entry this morning, but didn't get the chance to post it earlier as I was VERY VERY VERY VERY VERY busy today. In and out of the house, that I had wished I don't have to go out, which is out of the norm for MamaFaMi! Hahahaha..... This is because, hubby is around and we had a lot of things to settle. Alhamdulillah managed to settle all of them.... Now I can just doze off in peace... good night..... enjoy the entry... I'm gone....*yawnnnn*

Mama had been behaving quite well lately. Never sleep later than midnight. Normally by 11 pm, I am gone! I don't know why, but these few days I'll start feeling sleepy very early. Mmmmm agaknya Hari Mengantuk Sedunia kot! Even Kak Ana who doesn't sleep in the afternoon, can doze off nicely, and not just a short nap! That's what she told me! Is it the weather, or is it me getting 'younger'! Hahaha...

The goodness of sleeping early is, I can wake up in the morning feeling fresh. But the not so good thing about having 'enough' sleep for me is I tend to get lazy. How I hate that feeling! But then again, despite that lousy feeling, I tend to do more experiments than when I am my usual self! Hohoho... MamaFaMi is getting more and more complicated, even she can't understand herself!

Yesterday, I made three experiments. All three were certified 'LOVELY' by Syahmi Sdn Bhd. Why sendirian berhad? Because he ate most of it by himself. I just got to taste a bit, so that I am able to write the report here. Allow me to post the first experiment today. It'll be this Burger Bun courtesy of Hana budak yang tak reti dok diam tu in Japan. And she got the recipe from Ros. Thank you to both lovely ladies for the recipe shared. I made some adjustments to the original recipe to suit whatever's available in my stock.


BURGER ROLLS

Ingredients :

300 g all purpose flour
2 tablespoons sugar
1 teaspoon salt
2 tablespoons milk powder
1 ½ teaspoons instant dried yeast
1 egg (medium) ~ slightly beaten. Set aside a small amount for glazing.
2 tablespoons margarine
100 ml fresh milk
50 ml lukewarm water
2 tablespoons water roux
enough sesame seeds

Glaze :

Slightly beaten egg + 1 teaspoon fresh milk + a few drops of honey (for a shiny look)

Bread Maker method :

1. Pour the lukewarm water and milk into the bread maker pan.
2. Add in water roux, egg, sugar and salt.
3. Top it with flour, milk powder and instant dried yeast.
4. Set the bread maker to Dough setting. Once the dough is just combined, add in the margarine. Let the Bread Maker continues it's job which will takes about 1 1/2 hour to finish the cycle.
5. Remove the dough from the bread maker. Divide into 70g dough each. Make into a ball and let it rest for 10 minutes.
6. Shape the dough into round balls and flatten it slightly to make the burger rolls.
7. Leave to prove for another 1/2 hour or so.
8. Brush the rolls with the glaze and sprinkle with sesame seeds.
9. Bake in a preheated oven at 180 C for 15 minutes.
10. Open the oven door and spray the rolls with a bit of water. This is to ensure the sesame seeds stay attached to the rolls.
11. Bake for another 10 minutes or till rolls are done.
12. Remove from oven and brush with a bit of margarine, once out of the oven.

Cheese Tart Filling (Mak Lang Azie)


Q : Where is MamaFaMi? Why hasn't she update her blog? Is she busy downloading movies?
A : Yes and No
Q : What's the yes?
A : Yes to downloading movies
Q : And the no?
A : No...MamaFaMi is not downloading the movies but AyahFaMi is.
Q : Why can't you update the blog when he is downloading movies?
A : Because he is using MY laptop to do it!

We have quite a few laptops in the house plus a pc in Syahmi's room, but I guess, MY laptop is the chosen one! Hubby is downloading the movies from my laptop and being a 'chicken' me, I dare not mess around when he's downloading stuffs. Scared I'll accidently click the wrong thing and get into hot water! Anyway, today, I just have to brave myself and mess around just a little bit. I'll just stick to my 'slow lane' and not move anywhere beyond the line.... hahaha....insyaAllah I'll be safe!

Besides my laptop being hijacked by hubby, I was busy with visitors last weekend. Jun and MazBahrain dropped by my humble hut and we had a swell time together. First time meeting them but we chat like we've known each other ever since! From my place we went to Lea Oven and then to Maz's house. Thank you for the lovely time lovely ladies. Hope we'll meet up soon and create more havoc! Hahahaha..... That night hubby's niece and her hubby slept over at our place.

On Sunday, woke up early in the morning to prepare breakfast as the visitors had to leave early for a seminar in Klang. And hubby went for his weekend golfing. Thought of taking a short nap, to recover the lack of sleep the previous night but then, the mind was thinking of the list of errands to be done, and that's it, off to work work and work. At 3pm, our friend from Teluk Intan dropped by and when they left, continued with the house chores, went out with hubby and towards the night, I am all gone!!!

Opps...it's past 11.30am. I need to get cooking now. Let me just post the recipe to share. It'll be this cheesetarts that I had served to Jun and Maz when they came to my place last Saturday. Thanks to Mak Lang for sharing the lovely recipe with us.


CHEESE TARTS

Ingredients :

Tart casings/shells (recipe can be found here)

250g Philadelphia cream cheese
60g sugar
20g butter
1 egg
2 - 3 tablespoons whip cream
1 - 2 tablespoons sunquick

Filling of your choice : Mango, Strawberry and Blueberry

Method :

1. Cream the Philadelphia cream cheese, sugar, butter and egg together.
2. Add in whip cream and sunquick and continue beating till smooth.
2. Arrange the tart casings on a tray.
3. Pipe a bit of cream onto the casings. Put a bit of filling on top and cover it with more cream mixture.
4. Put a tiny bit of filling on top of the cream and using a toothpick, just sketch on the filling to create lovely design.
5. Bake in a preheated oven at 180 for 10 - 13 minutes.
