Made this chocolate cakes for Fatin and Mak Chu when we went to visit them last Saturday. Made just half the recipe and managed to get two of these.


WET CHOCOLATE CAKE
Source : Datin Rosie Hidayat

Ingredients :

375 gm butter
600 gm caster sugar
6 eggs
600 gm water
500 gm flour }
100 gm chocolate powder *
1 tea spoon baking powder * (* sift together )
1 tea spoon soda bicarbonate *
2 teaspoons vanilla essence (I added)

Method :

a. Beat butter and sugar till creamy.
b. Add in egg one at a time, then vanilla essence. Fold in flour and lastly water.
c. Pour into the prepared baking tins.
d. Bake in a pre-heated oven at 180 C for about 40 - 45 minutes. Baking time may differ according to your oven.

KEK COKLAT LEMBAB
Bahan-bahan :


375 g mentega
600 g gula kastor
6 butir telur
600 g air
500 g tepung *
100 g serbuk koko *
1 sudu kecil serbuk penaik * (* ayak sekali )
1 sudu kecil soda bikarbonat *
2 sudu kecil esen vanilla (mama tambah)

Kaedah penyediaan :

1. Pukul mentega dan gula hingga kembang.
2. Masukkan telur satu per satu. Masukkan esen vanila.
3. Kaupbalikkan bahan kering yang telah diayak.
4. Masukkan air dan kacau rata. Tuang di dalam loyang yang telah dialas dengan kertas minyak.
5. Bakar di dalam ketuhar yang telah dipanaskan terlebih dahulu pada suhu 180 C. Bakar selama 50 hingga 1 jam atau hingga kek masak. Jangkamasa pembakaran mungkin berbeza bergantung kepada ketuhar anda.

Ubi Goreng & Sambal Kicap

FRIED TAPIOCA

Ingredients :

1/2 kg tapioca (peel off the skin, washed and cut into wedges)
1 inch fresh turmeric
3 cloves garlic
2 tablespoons corriander
sea salt to taste
Enough oil for frying

Method :

1. Place the turmeric, garlic, corriander and sea salt in a mortar. Pound the ingredients to form a paste.
2. Rub the paste onto the wedges till well mixed.
3. Heat the wok and add in oil.
4. When the oil is hot, add in the tapioca and fry till golden brown.
5. Serve with sambal kicap

SAMBAL KICAP

Ingredients :

1 clove garlic
10 bird eye chilles (less if you don't want it too hot or just substitute with fresh red chillies)
sugar to taste
sweet soya sauce to taste
salt (optional)

Method :

1. Place garlic and chillie in a mortar. Pound the ingredients to form a paste.
2. Add in sugar and soya sauce to taste. If needed, add salt.


Sambal Kicap

UBI GORENG

Bahan-bahan :

1/2 kg ubi kayu (dikupas kulit, dicuci dan dipotong bentuk baji)
1 inci kunyit hidup
3 biji bawang putih
2 sdu besar ketumbar biji
garam kasar secukup rasa
Minyak masak untuk menggoreng

Kaedah penyediaan :

1. Tumbuk kunyit hidup, bawang putih, ketumbar dan garam hingga lumat.
2. Gaul rata bersama ubi.
3. Panaskan minyak di dalam kuali dan goreng ubi hingga perang keemasan.
4. Hidang bersama sambal kicap.

SAMBAL KICAP

Bahan-bahan :

1 biji bawang putih
10 biji cili padi (lkurangkan jika tidak mahu terlalu pedas atau gantikan sahaja dengan cili hidup)
gula secukupnya
kicap manis secukupnya
garam (jika perlu)

Kaedah penyediaan :

1. Tumbuk bawang putih dan cili padi.
2. Tambahkan gula dan kicap manis. Jika perlu, masukkan sedikit garam.

16.Korang kalau jumpe orang yang tag korang ni, apa agaknya korang nak hidang/belanja?
Mihun la sebab dia kata dia suka mihun! Hahaha.... Kalau orang yang mama tag ni jumpa mama, mama nak makan Kenny Rogers okay! Ahahaha...

Classic Sponge

Saalam to everyone... My duaas, may all of you be in the best of health.

I had my whole family at home last week. So I was pretty occupied. Trying my best to satisfy everybody's need. And at the same time, I had visitors too. Though I'm not feeling 100% fit, I've tried my best. Hopefully everybody's happy.

When Fatin came back, she had flipped through my newly bought cake book. She told me to bake a cake from there as she just had the urge to eat cakes. Being a mother who never has the heart to say no to any request especially when it comes to baking, I was more than willing to bake her one, with great pleasure. And alhamdulillah it came out lovely and the way Fatin enjoyed the cake, it was worth each and every bit of my effort. Thank you my darling baby.

Fatin dearest, may you excell in your SPM. You've worked hard and now just try your very best. Just remember, in everything you do, you have a purpose. You must be prepared to pursue your purpose. Always pray and ask for direction, guidance and protection from Allah Subhanahuwa Taala. Always be positive. May Allah bless you my dear. Amin

Classic Sponge

CLASSIC SPONGE

Ingredients :

1/2 cup plain flour
1/2 cup self-raising flour
4 eggs - separated
2/3 cup caster sugar
1/2 cup blueberry jam
1/2 cup cream, whipped

Method :

1. Preheat oven to moderate 180 C. Brush 2 shallow 20cm sandwich tins with melted butter or oil. Line bases of tins with baking paper. Sift flours together three times onto a sheet of greaseproof paper. Place egg whites in a large clean, dry bowl. Using electric beaters, beat until firm peaks form. Add sugar gradually, beating constantly until sugar is dissolved and mixture is thick and glossy.
2. Add the egg yolks, beat for another 20 seconds. Fold in flour quickly and lightly with a metal spoon.
3. Spread mixture evenly in prepared tins. Bake for 20 minutes, until lightly golden and springy to touch. Leave the sponges in tins for 5 minutes before turning onto wire racks to cool.
4. Spread jam evenly onto one of the sponges. Using a fluted nozzle, pipe whipped cream in rossettes over jam. Top with second sponge, and dust with sifted icing sugar before serving.

Storage time :
Unfilled sponges can be frozen for up to one month; freeze in separate freezer bags. Thaw sponges at room temperature (for about 20 minutes). A filled sponge is best served immediately.

Hint :
The secret to making a perfect sponge lies in the folding technique. Use only a large metal spoon, working quickly yet gently to incorporate the flour. A beating action, or using a wooden spoon, will cause loss of volume in the egg mixture and will result in a flat, heavy cake.

Classic Sponge

KEK SPAN KLASIK
Bahan-bahan :


1/2 cawan tepung
1/2 cawan tepung naik sendiri
4 biji telur - diasingkan putih dan kuning
2/3 cawan gula kastor
1/2 cawan jem blueberi
1/2 cawan krim putar, dipukul hingga kembang

Kaedah penyediaan :

1. Panaskan ketuhar pada 180 C. Griskan 2 loyang bulat bersaiz 20sm. Alaskan dasarnya dengan kertas minyak.
2. Pukul putih telur hingga kental di dalam bekas yang bersih dan kering. Masukkan gula sedikit demi sedikit sampai habis. Terus memukul hingga gula larut dan adunan pekat dan berkilat.
3. Masukkan kuning telur dan pukul lagi 20 saat.
4. Kaup balikkan tepung.
5. Tuangkan adunan ke dalam 2 loyang tadi. Bakar selama 20 minit hingga kek kuning keemasan. Setelah masak, biarkan kek di dalam loyang selama 5 minit sebelum dikeluarkan dan disejukkan di atas redai.
6. Sapukan jam di atas satu kek dan paipkan krim putar. Letakkan kek kedua di atasnya. Taburkan dengan sedikit gula icing sebagai hiasan.

CERITA KREATIF : Aku nak bagi BEN ASHAARI hadiah ..

Hari ni, mama skip citer makan eh. Hari ni nak masuk pertandingan. Tadi mama pergi rumah MAT GEBU. Dahlah siksa tengok mee dia, pas tu dia usha usha suruh join contest Ben. Mana boleh tahan. So Ben, ini dia mama submit mama punya entry. Last minute pun kira halal la ye. Girl just wanna have fun! Wish me luck you all!!!

Nak bagi apa untuk hadiah harijadi Ben?
BROWNIES. Nak ke dia? Nak tak nak, orang dah bagi, kenalah terima kan?

Mengapa bagi brownies?
Sebab mama sendiri akan buat brownies tu. Jadinya, adalah 'sentimental value'. Lagipun, brownies tu boleh mengenyangkan perut! Leh share makan sesama isteri terchenta.

Hadiah mama ni, tak perlulah nak kena tabung duit lama-lama sebab semua bahan-bahan dah sedia ada dan dibuat dengan penuh kasih sayang lagi tau.

Untuk Ben, selamat hari jadi dan semoga dipanjangkan umur, dimurahkan rezeki, diberi kesihatan yang baik dan diberkati kehidupan. Amin.

Kuah Lodeh

Jumaa Mubaraq to all...

Often, when I chat with my cyber friends, they'll say, I have a good sense of humour and I am a very bubbly kind of person. Well, in a way, I admit I am. But to those who had met me in person, might find me a 'someone' else especially when I am in public or when I am in a crowd. I became 'timid' and 'tamed'. Some do have doubts, is this the real MamaFaMi or someone in disguise.

Honestly, I, myself don't really know why this happens. I will automatically switch into someone else depending on the situation and environment. In order for me to be really myself, it has to be in the comfort of my home and in very small group. If I am in a big crowd, even at my own home, I will be the timid and tamed type! Funny isn't it!

If you need confirmation about this matter, please feel free to ask Ummi because she had been in both situations. The first time we met was at IKEA and she had doubt about me. I didn't sound anything like how I was when chatting online with her. That's when she gave me the title "Manusia Dua Alam" Hahahaha.....

Recipe to be shared today as promised to Sherry Dzul is this dish which I cooked for the previous Eid-Ul-Adha. Thank you so much to Iza for sharing this lovely recipe with us. Allow me to post it here for the benefit of my dear visitors and also for my future reference. I will post how I had prepared the dish, depending on what's available in the refrigerator.

Kuah Lodeh
KUAH LODEH

Ingredients :

(A)
6 shallots - sliced
4 cloves garlic - sliced
2 inch ginger - sliced thinly
3 inch galangal - bruised
1 inch fresh turmeric - minced
4 stalk lemongrass ~ bruised

(B)
Coconut milk (from 6 coconuts)
Fresh prawns - cleaned
3 carrots - sliced jullianne
4 pieces tempe - cubed and fried
4 medium potatoes - cleaned and cut to good size chunks
Long beans
2 packets Su'un
2 sticks dried yellow tofu skin (fuchuk)
4 fresh red chillie
salt to taste
Zeal - optional
Cooking oil

Method : (my way)

1. In a pot, heat enough cooking oil. Add in ingredients A. Saute till fragrant.
2. Pour in the coconut milk. Add in the prawns, carrots and potatoes. Leave to boil, stirring once in a while.
3. When boiling, add in the rest of the ingredients except salt and zeal. Continue stirring.
4. Add salt and zeal to taste.
5. Ready to serve with Nasi Impit.

KUAH LODEH

Bahan menumis: (mesti dimayang halus)

6 ulas bawang merah
4 ulas bawang putih
2 inci halia
3 inci lengkuas
4 batang serai

Bahan rencah (sayur-sayuran):

Santan (6 biji kepala)
Udang basah (rm1.00,kalau nak lebih boleh tambah)
1/2 kobis bulat (hiris halus)
3 batang lobak merah (potong 1 inci panjang)
6 keping tauhu goreng (belah 4 atau ikut suka)
4 keping tempe (belah2 ikut tauhu pastu goreng)
4 biji kentang (besar)(belah kecil2 pastu goreng)
1 ikat kacang panjang (potong 1 inci panjang)
2 peket suun )
2 peket fucuk ) direndam
4 biji cili merah (hiris)

Bahan perasa:

Garam
Ajinomoto (kalau suka)
Serbuk kunyit

Cara memasak:

1. Tumis bahan penumis ngan minyak secukupnya hingga wangi dan agak garing.
2. Masukkan santan kemudian bahan2 rencah dan serbuk kunyit. Kobis, kacang panjang, suun dan pucuk dah mendidih baru masukkan.
3. Rasa garam, ajinomoto dan cili merah. Rasa2 dah masak tu bolehlah tutup api tu...

Selamat mencuba....iza belajar dari mak mentua nie...apa yg dia ajar cam tulah iza perturunkan kat sini... Itu utk lebih 10 org makan....kalau tak ramai bolehlah dikurangkan kuantiti bahan tu...pepandai koranglah kan...

Marble Vanila Muffins

Marble Vanilla Muffins
MARBLE VANILLA MUFFINS

Ingredients :

180 g butter
140 g castor sugar
2 large eggs
100 ml fresh milk
220 g flour*
2 teaspoons baking powder*(*sifted together)
1 teaspoon vanilla essence
1 teaspoon chocolate emulco

Method : (my way)

1. Cream butter and castor sugar till light. Add eggs, one at a time. Continue beating. Then add vanilla essence.
2. Lower the speed. Add flour alternately with milk starting and ending with flour.
3. Remove 1/2 of the mixture and add chocolate emulco. Stir well.
4. Spoon the plain mixture into the prepared muffin cups. Top it with the chocolate mixture. Repeat the process until the muffin cup is almost filled up.
5. Bake in a pre-heated oven at 180 C for 20 to 25 minutes.

Marble Vanilla Muffin

MARBLE VANILLA MUFFIN

Bahan-bahannya :

180 g mentega
140 g gula halus
2 biji telur gred A
100 ml susu segar
220 g tepung gandum*
2 sudu teh baking powder*(*digaul rata dan ayak)
1 sudu teh esen vanilla
1 sudu teh coklat emulco

Kaedah penyediaan :

Putar mentega dengan gula halus hingga putih, masukkan telur satu persatu sambil terus memutar hingga kembang.
Perlahankan speed, masukkan tepung berselang seli dengan susu segar, hingga habis. Masukkan esen vanilla dan kacau rata.
Cedok keluar 1/3 adunan dari no. 1 dan masukkan coklat emulco, kacau hingga rata dan sebati. Sudukan adunan tanpa warna dalam paper cup atau muffin cup, 1/2 bahagian, kemudian, sudukan sedikit adunan coklat.
Gunakan lidi sate, buat beberapa pusingan untuk membentuk corak marble. Buat hingga siap.
Bakar dalam oven pada suhu 175C selama 20 - 25 minit atau hingga masak. Sejukkan atas jaringan sepenuhnya sebelum dihidang. Kalau suka boleh juga hias dengan krim putar dan parutan coklat...

Yesterday evening, while chatting online with Mat Gebu, I had told him how lazy I was feeling that time. And yet, the tummy is feeling hungry but was just too lazy to go downstairs to eat! That was almost 3. And guess what, I wasn't alone. He too felt the same. At the same time, we chatted about food. What if we cook this, bake that, so on so forth!

Finally at 3.30 pm, I made my way to the kitchen. Struck by I don't know what, suddenly I transformed into someone totally opposite from the person I was an hour ago! muahahaha...dah macam citer Transformers la pulak bunyinya... I started doing one thing after another. And one of the product, produced after the transformation is this Blackpepper chicken Puff.

I've posted this recipe before but since Sae had asked for it, after tasting the few pieces that I had sent her, so I'll just re-post the recipe again today. It's more like to show off the special gadget rather than the recipe! Hahaha... Don't ask me where did I buy the gadget from because it was gift from my dearest friend, Mat Gebu when I went to his place during Eid. Thank you so much Mat for the gift. I trully loved it...

Blackpepper chicken puff

BLACKPEPPER CHICKEN PUFF's FILLING

Ingredients :

1 Holland onion ~ diced
3 medium potato ~ cleaned and diced
Minced chicken
White pepper
Black pepper
Salt to taste
Spring onions ~ chopped
Oil for cooking

Method :

1. Boil the diced potato with a bit of salt till slightly soft. Set aside.
2. Heat a bit of oil in a wok and add in onion. Fry till soft.
3. Add in the minced chicken and mix well. Let the minced chicken slightly cooked then add in the potato.
4. Add in white pepper, black pepper and salt. Stir to mix.
5. Once meat is cooked, just before removing from heat, sprinkle some spring onions.

Note :
1. For the pastry, I had used the readymade puff pastry, Kawan Brand.
2. To produce the 'net' pattern, I had used this gadget.

INTI AYAM LADA HITAM

Bahan-bahannya :

1 biji bawang Holland ~ didadu kecil
3 biji kentang sederhana ~ dikupas dan didadu
Isi ayam cincang
Lada putih
Lada hitam
Garam secukup rasa
Daun bawang ~ dihiris
Minyak untuk menumis


Kaedah penyediaan :
1. Rebus kentang yang didadu hingga hampir lembut. Ketepikan.
2. Panaskan minyak di dalam kuali dan masukkan bawang.
3. Bila bawang telah layu, masukkan ayam cincang dan kacau rata. Biarkan ayam hingga hampir masak, baru dimasukkan kentang yang telah direbus tadi, bersama dengan air rebusan..
4. Masukkan lada putih, lada hitam dan garam secukupnya. Kacau rata.
5. Sebelum memadamkan api, masukkan daun bawang.

Nota :
1. Untuk pastrinya, mama gunakan puff pastry jenama Kawan (di dalam plastik putih)

Daging Masak Kicap

Yesterday I had a few doubts... which makes me restless and ended up feeling tired...

Firstly, I kept thinking whether to bake the Mama Carries cookies, ordered by a friend of mine, or not. Finally made up my mind, not to do it as I am not in the mood actually. Ended up.... mopping the whole house instead...

Secondly, had to decide whether to bake another batch of 100 pieces tart shells yesterday night or this morning. For the very first time, after a good few thousands of tart shells that I've made before, yesterday I burnt TWO trays of tart shells! Huwaaaaaaa... I must have done something really bad to be 'paid cash' by Allah. Please Allah forgive me for my negligence.... Allah hu Akbar! After dinner, I sat down preparing another set of 100 pieces. It's time consuming, but I don't have a choice because Kak Long'g going to collect them this morning. Alhamdulillah, this time, they came out nice. I just hope that Kak Long thinks the same.

Daging Masak Kicap
DAGING MASAK KICAP

Ingredients :

400 g topside beef ~ sliced thinly
2 medium potatoes ~ cleaned, sliced thinly and fry. Set aside.
3 tablespoon sweet soya sauce
1 tablespoon thick soya sauce (I didn't put this in. Stock not available!)
1/2 onion
2 inch ginger
1 clove garlic
2 tablespoons chillie paste
1 cinnamon stick
2 pieces star anise
1/2 cup water
cooking oil
1/2 Holland onion ~ cut into 1/4-inch thick slices and separated into rings

Method :

1. Mince onion, ginger and garlic to form paste.
2, Heat oil in a wok and add in cinnamon stick and star anise. Add in the minced paste and fry till fragrant.
3. Pour in sweet soya sauce and thick soya sauce. Stir. Add in the tender beef and 1/2 cup of water. Make sure the gravy covers the beef. Let it simmer till beef is tender.
4. Add in sugar and salt to taste, if necessary. Just before removing from heat, add in the onion rings and the fried potato. Stir for another 5 minutes and ready to serve

Daging Masak Kicap

DAGING MASAK KICAP

Bahan-bahanya :
400 gram daging boneless ( dihiris nipis-nipis atau di potong dadu kecil)
2 biji kentang sederhana besar ~ dikupas, dihiris sederhana tebal, digoreng dan ketepikan (*Mama tambah)
3 sudu besar kicap manis
1 sudu besar kicap pekat
1/2 biji bawang besar
2 inci halia
1 biji bawang putih
2 sudu besar lada kisar ( ni kalau nak ganti dengan hirisan cili padi pun boleh)
1 batang kayu manis
2 kuntum bunga lawang
1/2 cawan air
sedikit minyak untuk menumis
1/2 biji bawang besar ( dihiris kasar)

Caranya
1. Mula-mula blender bawang besar, bawang putih dah halia hingga hancur, ( kalau nak hiris nipis pun boleh) panaskan minyak dan tumis kayu manis dan bunga lawang, kemudian curah bahan kisar tadi dan lada kisar, tumis hingga naik bau dan agak garing.

2. Kemudian masukkan kicap manis dan kicap pekat, selepas itu masukka daging dan 1/2 cawan air, pastikan daging tenggelam, masak daging hingga empuk dan kuah kicap tadi menjadi pekat, sesuaikan rasa, masukkan garam dan sudu kecil gula, jika daging belum empuk boleh tambah air, akhir sekali masukkan bawang besar yang dihiris kasar dan kacau hingga bawang agak layu, angkat dan hidangkan. Selamat Mencuba.

( kalau nak rebus daging sampai empuk pun boleh, bila masak tu boleh kurangkan kuantiti airnya)

Apple Muffin with Chocolate

When I first saw Mat Gebu's Peppermint Muffin With Chocolate's photo posted in his blog, I said to myself that I just had to try it out one day. Took a pen and my sketch book, straight away copied down the recipe. It was only last Sunday I managed to try out the recipe. But when I opened my larder, only to find that I ran out of Peppermint essence. Gosh... what must I do? I kept digging and wallah.... I found a bottle of green apple essence. That should do the trick! And so, I had transformed Mat's Peppermint Muffin to Green Apple Muffin! Sorry Mat, bukan sengaja nak derhaka, tapi terpaksa menderhaka gara-gara teruja nak buat di dalam keadaan kemalasan yang melanda... Thank you Mat for sharing with us this lovely recipe.

Apple Muffin with Chocolate

APPLE MUFFIN WITH CHOCOLATE
Adapted from : Mat Gebu's Blog

Ingredients :

100 g butter
85 g castor sugar
2 eggs
175 g flour *
10 g baking powder * (sift together)
80 ml fresh milk
30 g Cadbury plain Milk Chocolate Bar ~ diced
a few drops of green apple colouring
2 to 3 drops of green apple essence

Method :

1. Preheat oven to 180 C.
2, Cream butter and sugar till light and creamy.
3. Add eggs gradually, beating well after each addition.
4. Add in green apple essence and green apple colouring. Stir.
5. Using a metal spoon, fold in sifted flour and baking powder alternately with milk. Stir till smooth.
6. Add in the chocolate chunks.
7. Spoon mixture into the prepared muffin cups, 3/4 full.
8. Bake in the oven for 25 to 30 minutes.

MUFFIN EPAL DENGAN COKLAT
BAHAN-BAHANNYA :
100 g mentega
85 gram gula halus
2 biji telur gred A
175 gram tepung gandum*
10 gram baking powder*(*digaul rata dan ayak)
80 ml susu segar
30 gram coklat susu, didadu kecil
Beberapa titik perwarna hijau epal
2-3 titik esen epal hijau

CARA MEMBUATNYA :

Panaskan oven pada suhu 180C, alas muffin pan dengan paper cup atau guna muffin cup jenis keras. Ketepikan.
Putar mentega bersama gula hingga sebati, masukkan telur satu persatu sambil terus memutar hingga kembang, jarak masa antara 1 biji telur ialah seminit. Perlahan kan kelajuan, masukkan tepung berselang seli dengan susu segar. Putar sebati.
Masukkan pewarna hijau muda dan esen epal, putar sebati. Akhir sekali masukkan coklat susu tadi, gaul rata.
Sudukan 3/4 penuh dan bakar 25 - 30 minit atau hingga kuning keemasan. Sejukkan sebelum dihidangkan...

Chocolate Cake

These past 5 days had been a hectic period for me. Having a full quorum at home, at times can be very handful. I had to be an "All-In-One" kinda person. Running and rushing here and there hoping to settle all that's been planned. Alhamdulillah I managed. Now I can sigh with relief and looking forward to a new week, hopefully a much relaxing one....

Yesterday, I had only planned to bake a box of brownies for my daughter to bring back to her hostel, upon request that is. While I was mixing the brownies, I just thought of baking some Chocolate Chips cookies for her as well. When the brownies was baking in the oven, and while I was making the cookies, I said to myself, why not try out the new muffin recipe that I came across while bloghopping that day. And so I did that too. After that, I prepared the garlic bread and mushroom soup for the kids, as per request. Done with that, I made fried rice for dinner though that time it was only 4pm. We skipped lunch as we had brunch at 11am.

That was what happened when mama is in her 'on-the-move mode'....otherwise.... you don't want to know!!! Hahaha....

Recipe to share today is this chocolate cake, taken from a book that I just bought and using a new tray too. I may have overbaked the cakes resulting to a slightly dry texture. In the book, they had baked the cake in one tray and not in these small cups. So the baking time should be less. Never mind, I learnt from my mistakes. Hoping not to repeat it again next time.

Favourite Chocolate Cake

FAVOURITE CHOCOLATE CAKE

Ingredients :

185g butter
3/4 c caster sugar
2 eggs ~ lightly beaten
1 cup self-raising flour
3/4 cup plain flour
1/2 cup cocoa powder
1 teaspoon bicarbonate of soda
1/2 cup milk

ICING (I didn't do this) :

30g butter ~ melted
2 tablespoons hot water
2 tablespoons cocoa powder
1 cup icing sugar

Favourite Chocolate Cake

Method :

1. Preheat oven to 180 C. Line a 21 x 14 x 7cm loaf tin with baking paper.
2, Using an electric beaters (I did it manually), beat butter and sugar till light and creamy.
3. Add eggs gradually, beating well after each addition.
4. Using a metal spoon, fold in sifted flours, cocoa powder and bicarbonate of soda alternately with milk. Stir till smooth.
5. Spoon mixture into the prepared loaf tin and smooth surface.
6. Bake in the oven till a skewer comes out clean when inserted into centre of cake. Leave in tin for 5 minutes before turning onto a wire rack to cool.

To make icing :

Combine butter, water and cocoa in a medium mixing bowl. Mix to a smooth paste. Add sifted icing sugar. Stir until all the ingredients are combined and mixture is smooth. Spread icing onto cooled cake and dust with icing sugar.
Note : I just drizzled some melted cooking chocolate onto the cake.
