Sweet Potato Ondeh-Ondeh

Alhamdulillah we meet again today. I was not well the whole of yesterday. I had koyok pasted on both sides of my temples, hair tied with 3 rubberbands...I think I looked like Shrek with an extra ear popping in the middle of the head! I do feel green though! Hahahaha...

Thanks to Miss Headache who decided to pay me a visit yesterday morning and just refused to go away though I had tried to ignore her with all my might. My friends used to call me the blue power ranger...blue being my favourite color and energetic, to describe the word power ranger. But I guess, yesterday, this blue power ranger just 'punctured'!

I had to give in and swallowed one tablet and off to Dreamland... mmm what did I dream yesterday...mmm....

And this morning, I woke up to the sound of the heavy rain by the window sill. Lovely. If only today is Saturday, won't that be nice... But what is nicer... Miss Headache left! Yabedabedoooo......

Onde onde

SWEET POTATO ONDEH-ONDEH

Ingredients :

2 sweet potatoes
salt to taste
Enough glutinous rice flour

Filling :
I piece palm sugar - diced

Coating :
Grated coconut - just the white meat
a pinch of salt



Method :

1. Clean the sweet potatoes and diced. Place in a pot of water. Add salt to taste. Boil till sweet potatoes are tender. Put through a sieve.
2. When cool enough to handle, mashed the potatoes and add glutinous rice flour, enough to form a soft dough.
3. Mix the grated coconut with a pinch of salt and steam for about 2 to 3 minutes. Remove from the steamer and let it cool completely.
4. Take a bit of the dough and lightly flatten it on your palm. Place a piece of the palm sugar in the middle and cover it with the dough. Roll into a ball and keep aside. Repeat this procedure till all the dough is used up.
5. Bring a pot of water to boil. Put in the ondeh-ondeh. When the ondeh-ondeh float to the surface, remove them and shake off the excess water.
6. Coat the ondeh-ondeh with grated coconut and ready to serve.

Dragon Fruit Pudding

Courtesy is the best policy... or... was it honesty is the best policy? Mmmm.. well, both will do, right. Of course honesty is important in life and so does having courtesy is as important.

This morning, on the way back from sending Syahmi to school, I gave way to a car coming out from the housing area near Syahmi's school. It's nothing new actually. I always give way to others whenever necessary and whenever is right to do so, but I don't know why, this morning, I felt very happy doing so. Maybe, I thought to myself, I made the driver happy by giving him way so that he can drop his son to school in good time. If I were him, I too would be grateful to those who did the same.

If you gave way to others, what do you expect from those you've made their life slightly easier? Well to me, just a slight gesture of thanks would be nice.. like putting up your hand or a nod or maybe just a smile will do. What if that fella just went off without a slight hint of thanks, how would you feel? You must be thinking... i shouldn't have given way to that proud person, right? Moral of the story... just by displaying a bit of courtesy can change the way people thinks about you.. Agree?

Last weekend, Harith's (Syahmi's friend) mom, Huda gave me two Dragon Fruits. Since I don't quite like to eat it just like that, I decided to transform the lovely colored Dragon Fruit into something else. I told Huda, if I managed to 'makeover' this fruit into something else, then she'll get to taste it and so she had her share yesterday. Alhamdulillah she likes it. Thanks to Ummi the marvellous and popular food blogger in Kuantan, for sharing this recipe with us. There are a few changes in the recipe though. Allow me to share it here for the reading pleasure of other. Thank you...


DRAGON FRUIT PUDDING

Ingredients :

1 Dragon fruit - preferably the red color meat
10g agar-agar powder
4 cups water
1 cup sugar
2/3 cup evaporated milk
1/3 teaspoon salt
1 teaspoon vanilla essence

Method :

1. Clean the Dragon fruit and grate the meat. Set aside.
2. In a pot, add agar-agar powder and water. Stir on high heat and let it boil.
3. Reduce the heat and add in sugar and evaporated milk. Stir and let it boil.
4. Add in the grated dragon fruit, salt and vanilla essence. Stir and leave to simmer for a few minutes.
5. Remove from heat and pour into your prefered mould. Leave to cool and then let it set in the refrigerator. Serve chill.

Chocolate Muffins

My sincere apologies for not being able to keep my promise in my previous entry. Didn't manage to post a new recipe nor update my blog yesterday as hubby and Syahmi were not feeling well and I had to run some errands. I was in and out of the house throughout the day. Sorry!

I admit... without a doubt... I am a jealous person. Halt... now now... don't get me wrong. I am not a jealous wife but I am jealous to all the individuals whom are so talented, no matter in whatever area (the good ones only ya). Whenever I go blogwalking, especially the food blogs, I always ended up with lots of 'Oohs' and 'Aahs'. I envy all the lovely photos that most of the bloggers 'served' in their blogs. I always wonder why my photos can't be like theirs. Why my food presentation can't be as superb as theirs no matter how hard I've tried.

Finally, I said to myself, I am me and I am not them. Maybe I need more time to improve and be as good as them but as of now, I must be happy with what I am doing, then only will I feel the satifaction, the happiness and the sincerity. Thats all that counts....

CHOCOLATE MUFFINS

Ingredients :

1 cup flour
1/2 cup cocoa powder
1/2 teaspoon bicarbonate soda
1/2 teaspoon baking powder
1/2 teaspoon nescafe granules
1 tablespoon milk powder
1/2 cup sugar
2 eggs - lightly beaten
1/2 cup cooking oil
2 tablespoons condensed milk
1/2 teaspoon vanilla essence
1 tablespoon juice of a Sunkist orange (I substitute with Sunquick)
1/2 cup hot water



Method :

1. Sift all the dry ingredients into a big bowl.
2. Add in sugar and mix well using a whisk.
3. In another bowl, add eggs, cooking oil, condensed milk, vanilla essence and sunquick. Stir using a whisk.
4. Pour the liquid into the dry ingredients and mix.
5. Finally add in the hot water and mix till well combined.
6. Spoon into the prepared cups, almost full.
7. Bake in a preheated oven at 180 C for 25 minutes.


MUFFIN COKLATSumber : Izahdaut

Bahan-bahan :

1 cawan tepung
1/2 cawan serbuk koko
1/2 sudu kecil soda bikarbonat
1/2 sudu kecil serbuk penaik
1/2 sudu kecil serbuk nescafe
1 sudu besar susu tepung
1/2 cawan gula
1/2 cawan minyak
1/2 cawan air panas
2 sudu besar susu pekat
1/2 sudu kecil esen vanilla
2 biji telur
1 sudu besar jus oren sunkist

Kaedah penyediaan :

1. Ayakkan semua bahan kering ke dalam mangkuk besar. Masukkan gula.
2. Gaulkan sebati. Ketepikan.
3. Campurkan semua bahan basah ke dalam bekas kecuali air panas.
4. Tuang bahan basah ke dalam bahan kering. Gaul sebentar.
5. Kemudian tuang air panas.
Bakar pada suhu 180 C slama 25 minit.

Time, why is it always to be blamed???

A week has passed.. time flies! What's more, this week, I had been very busy... slightly busier than the bee.. that's why I feel like time is being fast forwarded! If only time can be rewinded, how nice it would be... I will surely want to be in Malawi again... *grin*

Anyway, back to reality... frankly speaking, this week, I had not done much experimenting in the kitchen as time does not permit me to do so... sorry dear Mr Time, I kept blaming you! But do I have a choice? Hahaha... For now, I will just passed the recipe column. InsyaAllah will try to post a recipe tomorrow. Mind the word..WILL TRY yeah.. *grinning sheepishly*.

I will just post the photos of my recent orders from friend and cousin. After quite a while, not playing with buttercream, this is the best that I could come out with. I do hope, they are satisfied with what I had produced. Thank you for your order ya... mama jual...

Books 4 Charity

Hello hello hellooo....
Mama menjelma ni... ahaks.. Sorrylah dah dua hari blog tak diupdate. Tak sempatlah. Macam-macam perkara yang telah dilakukan... nanti mama cerita satu persatu ye... tapi rasanya kalau tak cerita pun, orang bukan kesah kan kan kan... hehehe...

Untuk entry ni, mama nak cerita aktiviti mama dan Mak Chu hari ni. Dari pagi tadi, mama sibuk di dapur buat kek dan kemas dapur yang cantik sket je dari kapal karam. Hehe.. Pukul 12.10 tengahari Mak Chu sampai, mama sogok dia suruh main Ipad2 mama sementara mama naik atas, mandi dan bersiap. Sogok tu bukan apa, takut Mak Chu membebel je sebab mama lom siap. Hehe... ini sogok halal punya wokey...

Selesai bersiap, kami pun bertolaklah ke rumah Ida Books4Charity di Sg Buloh dengan membawa sedikit ole-ole...



Sampai di sana, kami disambut dengan senyuman yang tak lekang di bibir oleh tuan rumah dan dua orang tuan puterinya. Terus aje kami dijamu dengan makan tengahari yang sedap sekali. Terima kasihlah Ida, penat-penat je memasak untuk kami... lain kali, masaklah lagi ye.... ahaks...






Perut dah kenyang, kami diarahkan ke atas dan disogok dengan buku cerita yang ntah berapa rak tah... aduyai... tersiksa jiwa dan raga ku mengawal nafsu membeli... huhuhu... Pengabisnya, kubu nafsu membeli ku telah dicerobohi oleh...


..siap bawak bakul tau, nak isi buku.. sebab kan hari ni hari Sabtu, NO PLASTIC BAG DAY... ahahahaha....


Bagi sesiapa yang mempunyai akaun Facebook, bolehlah add BooksforCharity Nizida dan bolehlah mula shopping di sana ye. Sebahagian dari hasil jualan buku akan diperuntukkan untuk kerja-kerja amal.

Okay, itulah antara aktiviti sengal Mama dan Mak Chu termasuklah Ida dan puteri bongsunya. Puteri kedua Ida tak larat nak layan kesengalan kami, jadinya dia pun capai satu buku dan terus masuk dalam bilik tak keluar keluar sampailah makcik-makcik dua orang ni balik... hehehe... tobat agaknya dia! Hahaha... Apa-apa pun, terima kasih banyak dari kami berdua buat Ida. Jangan serik ye terima kehadiran kami lagi...

Yes, I know... it's sweet potato tsunami at MamaFaMi's kitchen! Hahaha... It so happens that I bought some lovely sweet potatoes from the supermarket. Instead of just frying it the usual way, I've 'transformed' the sweet potatoes into something else. Just to create more varieties in my recipe collection. *wink* Came across this nice and soft bun from Amelia's De-ssert's Page. Since her plaitted rolls looked so lovely, I can't help myself but try out the recipe. But mine turned out to be ugly. Nevertheless the taste is lovely and that's what counts! Hahaha..... cover line beb...

SWEET POTATO BREAD

Ingredients :

260 mls sweet potatoes water
1 1/2 teaspoon salt
60 gm butter
1 egg - lightly beaten ( Reserve some for egg wash )
120gm mashed sweet potatoes
600gm bread flour ( Sieve )
1 1/2 tablespoons milk powder
70gm sugar
4 teaspoons instant yeast

Method :

1. Wash and peel the sweet potato skin.
2. Cut cube and boil with water until soft.
3. Keep the sweet potato water aside to cool completely.
4. Mash the sweet potato and leave it to cool completely.
5. Sieve the flour, add milk powder,sugar,yeast, salt and mix well.
2. Add the egg, sweet potato and water, knead into a dough and add butter.
3. Knead until the dough is smooth, cover and prove for 1 hour.
4. Punch out gas, rest 5 mins. Divide the dough according to your pan size or the shape that you would like to made.
5. Roll out the dough and then roll up like swiss roll.(This step is for loaf type )
6. Put in a grease loaf pan,cover and prove 45 mins.
7. Brush with egg wash and bake at 190 deg c for 15 mins or until cooked.
8. Remove from oven and cool on wire rack.

If using breadmaker
1. Add the ingredients to the bread pan in the order as suggested by the manufacturer of your breadmaker brand.
2. Press dough function, when ready remove from bread pan. Divide the dough according to your pan size or the shape that you would like to made, rest 5 min.
3. Roll out the dough and then roll up like swiss roll. (This step is for loaf type)
Cover and prove for another 45 mins.
4. Brush with egg wash, bake at 190 deg c for 15 mins or until cooked.
5. Remove from oven and cool on wire rack.

Note: Please adjust the temperature and baking time according to your type of oven.

Kuih Bom Keledek

Ingredients :

(A) :
500g sweet potato
1 cup flour
1 cup sesame seed
1 teaspoon salt

(B) Filling :
1 cup freshly grated coconut
1/2 cup palm sugar
1/2 cup water (I omit)
1 piece screwpine leaf (daun pandan) - knotted

Oil for frying

Method :

1. Clean the sweet potato. Diced and place in a pot with enough water and salt. Boil till tender and remove from heat. Discard the water. Mash the sweet potato.
2. Add flour to the mashed sweet potato and mix well.
3. For the filling, place all the ingredients in a skillet and cook over medium fire till the sugar is well mixed with the coconut and slightly dry. Remove from heat.
4. Take a small portion of the dough, flatten it and place enough filling in the middle. Cover the filling with the dough to form a ball.
5. Roll the ball onto the sesame seed.
6. Heat oil and fry the sweet potato balls till golden brown.
7. Remove from heat onto a kitchen towel. Ready to serve.

Pagi ni, mama nak mulakan dengan menyiapkan 'kerjarumah'. Yang benarnya, kerjarumah ni, mama dapat sekurun yang lepas. Silap haribulan, orang yang beri 'kerjarumah' ni pun dah terlupa agaknya. Begitulah teruknya mama sekarang ni kan? Tapi tak pe, macam omputih kata...better late than never. Jadinya mama buatlah jugak. Mokwo, kalau Mokwo dah terlupa, ini mama buat kerjarumah yang Mokwo bagi kat sini duluuuuuuu. Hehe... peace.. jangan mare!

MARRIED AND NOT AVAILABLE. Ahaks... boleh gitu? Apa lak tak boleh? Dah memang gitu. Mama telah mendirikan rumahtangga bersama suami ku nan terchenta dah 20 tahun. Alhamdulillah kami dikurniakan dengan dua orang cahayamata...seorang perempuan dan seorang lelaki... Dulu mama bekerja sendiri sebab puas hantar surat mohon pekerjaan tapi tak de yang sudi melamar. Baiklah mama kerja sendiri. Tapi memang mama ni tak suka kerja pejabat. Lebih suka buat kerjarumah. Tu yang jadi surirumahtangga sepenuh masa, by choice really!

CERITAKAN TENTANG DIRI ANDA


Kalau real life, size pinggang tu kali 4 ye.. ahaks
Mama anak sulung di dalam keluarga. Ada dua lagi adik, seorang lelaki dan seorang perempuan. Tahun ni, alhamdulillah merasa menjadi 45 tahun. Mama dilahirkan dan dibesarkan kebanyakkannya di Melaka sahaja. Bersekolah pun di Melaka gak. Bermula dengan CHIJ Melaka, Sek Ren Dato Palembang, MGHS dan kemudian di Sekolah Menengah Teknik Bukit Piatu. Habis sekolah menengah, terus sambung ke ITM Shah Alam. Tapi sebab mama ni tak berapa nak rajin belajar, lepas Diploma, dah tak mau sambung lagi (tak mau sambung ke tak leh sambung... hahaha...biarlah rahsia...) Lepas Diploma, dapat offer masuk progrem Skim Cepat Kaya Skim Latihan Khas. Bila keluar, dapat lesen dan terus on business, share dengan kawan. Agaknya mama ni jenis suka dok rumah buat kerjarumah kot. Tu yang mama rasa macam nak pencen je.. hehe. Bila hubby kena transfer overseas, mama pun dapatlah pencen dan menjawat jawatan SURIRUMAHTANGGA hingga ke akhir hayat, insyaAllah.. I like!!! Hobi mama, mencuba resepi baru, membaca buku cerita, menyelak majalah masakan terutamanya, melayari internet, menjahit cross stitch dan menggosok baju... Itu antaranya la kan... karang kalau tulis semua, mau tertidur orang baca! Hahaha..

CERITAKAN TENTANG BLOG ANDA

Mama mula bertapak di alam cyber semasa mama berada di Malawi, Africa, sewaktu mengikut suami bertugas di sana. Kak Liza aka Hanielizalah yang menjadi pendorong utama mama untuk membuka Fotopages sendiri. Dari sana, mama 'membuka cawangan' di blogspot atas nama MamaFaMi's Spice n Splendour.

Tauhu Bakar Sempoi

Every time I open the picture folders in my laptop, I will say... I must re-arrange the folder... I must delete the unwanted photos... I must this... I must that... But the true fact is, till today, the folders remain the same except the photos in them are getting more and more each day!!! And everytime I wanted to start doing it, the mind will say... it'll take ages to clear everything... and that puts me off.

But I guess, I have to do something soon before I am forced to do it!!! Huhuhu.... But when will that be?

TAHU BAKAR SEMPOI

Ingredients :

3 pieces tau fu
1/2 cucumber - jullienned
1/2 water chestnut (sengkuang) - jullienned
enough bean sprout (taugeh) - blanched
3 tablespoons sambal rojak
a bit of warm water
1 tablespoon roasted ground peanuts (I bought the readymade ones. Makes my job much easier!)

Method :

1. Place the tau fu on a non stick pan over medium heat. Grill till brownish in color, both sides of the taufu.
2. Remove from heat and slice or cut into chunks.
3. Place on a plate, with the cucumber, water chestnut and bean sprouts.
4. Mix the sambal rojak with warm water till slightly thin.
5. Pour over the tau fu.
6. Sprinkle with some coarsely ground peanuts.
7. Ready to serve.

Apam Jambu

Ingredients :

2 large eggs
2 cups cake flour (I used all-purpose flour)
1/2 cup evaporated milk (I used IDEAL brand)
1/2 cup plain yogurt
1 3/4 cup castor sugar
1 teaspoon ovallette
1 teaspoon vanilla essence (I substitued with rose essence)
1/2 teaspoon double action baking powder
pink food coloring

Method :

1. Prepare the steamer. Line the mini souffle cups into the steamer tray or if you're using the papercups, then place them in the plastic cup.
2. Mix all the ingredients together and beat at high speed till light and fluffy.
3. Remove 2 tablespoons of mixture and add some pink food coloring. Mix well.
4. Pipe the plain colored mixture into the souffle cups, pipe till almost full cup. Then dot a few red mixture on top of the plain mixture.
5. Steam for about 15 minutes.

Ingredients :

* 1 cup water
* 1/2 cup palm sugar (gula Melaka) - cut to small pieces
* 1 screw pine leaf (daun pandan)

2 cups flour
1 teaspoon dried yeast
3/4 cup water
3 tablespoons sugar
pinch of salt

Method :

1. Boil the ingredients marked with * till sugar dissolved. Put through a sieve and set aside to cool.
2. Mix the rest of the ingredients in a big bowl.
3. Pour the cooled syrup into the dry ingredients and mix thouroughly.
4. Cover the container and leave to rise for 40 minutes or till triple the amount.
5. Grease a baking tin with oil and leave for 5 minutes.
6. Pour the mixture into the tin and steam for 30 to 35 minutes or till a skewer inserted into the kuih apam comes out clean.
7. Leave to cool before cutting. Serve with fresh grated coconut mixed with a bit of salt.

BAB 1

Malam semalam, ingatkan nak update blog. Berkobar-kobar tu sebab jiwa tak kacau dan hati ku gembira. Sekali tu line tenet kat laptop mama down. Nak mintak tolong hubby tengokkan, dia dah 'belayar', kesian pulak nak kejut. Nak pujuk hati, terus gosok baju. Terubat sket rajuk ku ini... dan terkuranglah sikit timbunan baju belum bergosok ku iteww... hahaha... jadi tuan-tuan dan puan-puan, petua menghilangkan rajuk adalah menggosok baju... bley? ....muahahaha...
Mama gembira semalam sebab mama terima parcel dari Poslaju Malaysia. Hairan juga pada mulanya sebab hubby tak ada pulak beritahu dia ada beli apa-apa online dan mama pun tak ada beli apa-apa online. Rupanya mama dapat hadiah dari rakan yang mama kenali di Facebook...erk facebook? huhuhu..nostalgia tuh... banyak kenangan manis.... Terima kasih banyak-banyak ye Fadzlina Kamis. Macam tahu tahu je mama baru habis baca novel oleh Norhayati Ibrahim dan sedang berfikir, buku apa pulak nak baca selepas ni...yang pasti... buku ini yang akan ku baca seterusnya.... dah siap balut tau....

Bila Niezza dah sebut perkataan 'wasiat' tu... rasa bersalah pulak kalau tak buat. Dahlah tu... nama mama yang pertama kena 'tembak'. Terharu tu sebenarnya... hihi..
