Chocolate Cookies


CHOCOLATE COOKIES

Ingredients :

250 g margarine (I used Planta)
3/4 cup castor sugar
1 egg yolk
1/2 teaspoon vanilla essence
4 tablespoons cocoa powder ~ sifted
2 1/2 teaspoons baking powder ~ sifted
Flour as needed
White cooking chocolate ~ decoration


Method :

1. Cream butter and sugar until light and creamy.
2. Add egg yolk and vanilla essence. Continue beating.
3. Add in cocoa powder, baking powder and mix.
4. Add flour as required to make soft dough.
5. Dust rolling board with a little flour and roll out dough to 6 mm thickness.
6. Cut using a cutter of your choice.
7. Bake in a preheated oven at 160 C for 20 minutes.
8. Leave to cool and decorate as desired.

Almond London 2

Tried another Almond London recipe just for variety. Thank you Mat for sharing.


ALMOND LONDON

Ingredients :

250g butter (I used Planta)
150g icing sugar
2 egg yolks
1 teaspoon vanilla essence
450g flour*
2 teaspoons emplex*(*sift together)
130 - 150 whole almond - fry without oil

To coat :

Cooking chocolate
A bit of cocoa butter

Sugar deco
Enough small papercups

Method :

1. Stir butter and icing sugar for 1 minute.
2. Add in egg yolks and vanilla. Stir till well mixed.
3. Add in enough sifted flour till a soft dough is formed.
4. Take a bit of dough, flatten it and place the almond in the middle. Wrap the almond with the dough and shape it to oval shape.
5. Arrange on a baking tray.
6. Bake in the pre-heated oven at 170 C for 20 to 25 minutes.
7. Remove from oven and let the cookies cooled completely.
8. Melt the cooking chocolate with a bit of cocoa butter. Coat the cookies with melted cooking chocolate and place it in a small papercups. Sprinkle with some sugar deco.
9. Keep in an air-tight container.

Rolled Blueberry Tart 2

1. Mode : EXTREMELY BUSY!
Had to really push myself to the limit to meet the deadline. Not that I am being my Mrs.Last Minute dot Com self, but the list kept getting longer just because Yours Truly is being Mrs Softy. I must be firm with myself in future, insyaAllah.... erk... will I be able too?? Hmmm...

There were smell of cookies baking in the oven, at midnight, most of this week. If the smells do travel, then my thousand apologies to all my neighbours! Can't help it...sorry!

2. I am blessed with a good hubby. These past few days, he had been 'baking' at the office. The first day he came home with two plastic bags filled with dodol, kuih bangkit gula melaka and putu kacang. The next day, he brought kuih ros/kuih goyang, kuih siput and bahulu. And yesterday morning, when he was about to leave for work, I told him that he need not 'bake' any more goodies as I think we had enough. But he said he's going to 'bake' some fruit cakes! So dear wifey can just goyang kaki and need not bake any cookies! Haha.. but I still have to bake some cookies for my mom's house and will bake her favourites only, if time permits!

I googled for this tart recipe because Saerah's sister wanted some Blueberry Rolled Tarts. Last year, I had used Mat Gebu's blueberry tart recipe. So this year, I might as well try something else and my search ended at Yatie's Kitchen. Thank you Yatie for sharing this melt-in-the-mouth recipe. According to Yatie, she got it from Kak Ita of RNet. Thank you both.


ROLLED BLUEBERRY TART 2

Ingredients :

(A)

250g butter (I used Planta margarine)
2 teaspoons caster sugar
2 egg yolks
2 teaspoon vanilla essence (I omit)
1/2 teaspoon blueberry emulco (I added)
purple food coloring (I added)

(B)

200g corn flour
140g flour

Filling :
Readymade blueberry paste (I got mine from Yummie's Bangi)

To drizzle :
White cooking chocolate - melted


Method :

1. Stir margarine and sugar. Add egg yolks, blueberry emulco and purple coloring. Stir to mix.
2. Add in corn flour. Stir.
3. Add enough flour till you get a very soft dough. I had lessen the amount of flour (Yatie used 180g), so that the dough can easily go through the tart piping mould.
4. Press the dough through the mould for about 2 inches long. Place some blueberry jam and roll the tarts. Put in a papercup and arrange on a tray.
5. Bake in a preheated oven at 160 C for 20 minutes.
6. Leave to cool and drizzle with some melted white cooking chocolate.

Coconut Cookies (Biskut Kelapa)

Hellooooo... after quite sometime, Missing In Action here... And in that 'quite sometime' period, I spent most of the time in the kitchen. Baking.... baking and non stop baking. But at the same time, rushing here and there, not to mention running up and down.... But the end result is so sweet... let that be only me to know... *wink*.

After what feels like ages, I managed to settle Mak Chu, my dearest sister's cookies and brownies. Alhamdulillah. She seemed happy with them and hopefully those who received the hampers will feel the same.





Managed to squeeze these two for Jid, in between... glad you like 'em Jid... and nice to see you again after all these while...



Yesterday while I was doing more cookies, I received a text message from my cousin, informing me about my uncle, whom I addressed as Ayah Long, is admitted to Kajang Hospital. Forwarded the message to my brother and told him, if he's bringing mom to visit Ayah Long, I would like to tag along (with hubby's permission that is). I had to reschedule my chores and managed to reach my brother's place, 2 minutes before he reached home from office! Don't ask about the number showing on my dashboard ya. *wink* *wink*

The three of us stayed with Ayah Long for quite sometime. He was sleeping all the time. His condition is not so good, according to the surgeon. We don't really know what had happened as my aunt was not around. The only person available is the grandson and he didn't tell us much. By the way, Ayah Long is 89 years of age. Our duaa, may Allah (Subhanahu wa ta'ala) give Ayah Long what's best for him. Amin.

This is one of our family's favourite recipe. Mom passed it down to me, or rather, I am the one who copied it down from mom's recipe book! Hahaha.... I think, she must have learnt it from the W.I Club she had joined during her younger years. When a recipe is in the oldies category, then rest assure they will only have basic ingredients but nevertheless, the taste stays yummy! At least that's what I think... how about you???


COCONUT COOKIES (Biskut Kelapa)

Ingredients :

5 oz margarine (I used Planta, now and forever...leh dapat komisen tak promote ni? Hihi)
4 oz caster sugar
1 egg yolk
1/2 teaspoon vanilla essence
2 oz fried grated coconut (for better taste, do not use the readymade desiccated coconut)
1/2 teaspoon baking powder
9 oz flour
Enough melted cooking chocolate to drizzle (ini mama je pepandai buat.. saja nak kasi mekap sket kat biskut tu)

Method :

1. Place margarine and sugar in a mixing bowl. Stir to mix, not to long.
2. Add in egg yolk and vanilla essence. Mix well.
3. Add in grated coconut. Add baking powder. Mix.
4. Add flour a little at a time till you get a soft dough. You may need less flour than stated in the recipe.
5. Roll the dough to 1 cm thick and cut using a cookie cutter of your choice.
6. Arrange in a tray and bake in a preheated oven at 160 C for 20 to 25 minutes.
7. Once cooled, drizzle with melted cooking chocolate.

Jumaa mubarak to all.

These couple of days, I had been busy in the kitchen till late at night. Baking cookies. Nope, not for the house but to fulfill orders. I wasn't serious enough to take orders this year, but it all started with Mak Chu asking me to bake some cookies for the hampers she's going to distribute to her clients. And yes, I started with that and then my neighbour had asked me to bake some pineapple tarts for her, just like last year. O ok... baked for her the 200 pieces she wanted. And after that, she had asked for another 250... Ok, I think I'll managed... and then, a few other friends asked me to bake them some too. And the numbers of cookies I have to do, increases. Oh me oh my.... will I have any cookies for my own house!!!! Huwaaa.....

Anyway, just to build up my confidence.... yes mama, you can do it...chaiyokkkkk chaiyokkkk...... pengsan!

Very sorry as I don't have any new recipes to share today. But will only share what I've done for Mak Chu so far... As for the others, don't worry, insyaAllah I will try my VERY BEST to deliver on time ya. Amin amin....

Nyonya Pineapple Tart (Kjee)

As promised in yesterday's entry, today I will post a cookie recipe that I've tried the day before. This time, I've tried one of the many pineapple tarts recipes that Kjee had kindly enough shared in her blog, Dunia Dari Dapur Kjee. Thank you Kjee for the lovely recipe. But my apologies, as I've added this and that and totally disobeyed you about the butter. I used buttercup as that was what's available in stock. Malaslah nak gi kedai beli butter...ampunnn!!! Nevertheless, the taste stays lovely! That's what matters the most! *wink*



NYONYA PINEAPPLE TARTS (2)

Ingredients :

200g butter
3 tablespoons icing sugar (sifted)
300g flour
4 tablespoons cornflour
2 egg yolks
1 teaspoon vanilla essence (I added)

Filling :

Readymade pineapple paste from Yummies Bakery



Method : (my lazy method. Kjee's method is slightly different)

1. Combine butter and icing sugar. Stir till just mixed.
2. Add in egg yolks. Stir to mix.
3. Add in vanilla essence.
4. Add cornflour and finally enough flour. (Amount of flour may differ depends on the consistency of the dough) to form a soft dough.
5. Roll to 1/2 cm thick. Cut using the pineapple tart cutter. Arrange on a baking tray lined with greaseproof paper.
6. Place a bit of filling onto the hollow part of the dough.
7. Bake in a preheated oven at 170 for 20 minutes.

My apologies to all. Yeah I know that my blog is known as the food blog as I share most of the recipes that I've tested in the kitchen, be it the delicious ones, the so so ones and even the not so ones... because to me, taste is very subjective. Some may dislike where else others may LOVE it so much. Anyway, why the apologies? Because in this entry, I won't be posting any recipes. InsyaAllah will post a new cookie recipe that I've tested yesterday, in my next entry. Stay tuned!

Dearest hubby,

I hope this letter finds you in the best of health.

This morning, on my way home from sending our dear son to school, I had a very very minor accident ada eh such word as very very minor accident with an ATOS. Since it was a very very minor one and no harm done to his car, his just showed me a thumbs up sign and smiled. I did apologize to him but from inside the car. And I drove home, slightly shaking.

Once parked at home, I checked the car and I found that not much harm done except for a few lines, which are not that obvious.

So I write, to apologize for being so careless and so absent minded. InsyaAllah I will try to be more careful in future.

Masak Lemak Cili Api Ikan Terubuk Asin

Sad news yesterday, my aunt, Allahyarharhamah Rohaya Yusof passed away peacefully at Hospital Pakar Sultanah Fatimah, Muar Johor, about 2 pm. We left for Muar around 2.40 pm. We reached Muar at 4.30pm due to heavy traffic somewhere before Muar town but alhamdulillah managed to pay our last respect to her before the burial. May her soul rest in eternal peace. Al Fatihah.

Masak Lemak Cili Api Ikan Terubuk Masin

Ingredients :

Bird eye chillies - amount depends on how hot you want it to be
Fresh turmeric (size of a thumb)
An inch shirmp paste (belacan)
5 potatoes - cleaned and quartered
1 small pack of coconut milk (I used KARA brand)
2 stalks lemon grass - knocked
1 piece salted Ikan Terubuk
Salt to taste (I didn't put)
6 pieces Bilimbi (belimbing buluh)

Method :

1. Minced together bird eye chillies, fresh turmeric and shrimp paste.
2. Place the minced ingredients and pototoes into a pot with enough water. Place on medium fire and let the potatoes soften.
3. Add in coconut milk, lemon grass and the fish. Keep stirring the gravy. When the gravy's boiling, add in the bilimbi. Stir for a while and remove from heat.
4. Serve with plain white rice.

A friend passed this useful information which she got from an Ustaz during one of the Tazkirah session that she had attended. This zikr is good to be recited anytime and the best is when you're about to break your fast. Also before you go to sleep while in your wudu. Wallahu'alam.

I was at Hospital Pakar Sultanah Fatimah, Muar Johor yesterday. Went there with my mom and my brother to visit my aunty who was hospitalized there the night before. She wasn't looking that good yesterday and the sight of her reminds me a lot about what my mom had been through and it's very sad. I can understand how my cousins must be feeling at the moment. Please pray that my aunt will be okay. Thank you...

Since I was given some bananas by Kak Noha when we stopped by her house last weekend, I had browse through the net to look for something that I can do to the bananas and settled for this. Thank you Hasue for the recipe. Please allow me to post the recipe here. Thank you.


PISANG GORENG RANGUP

Ingredients :

2 cups flour
2 tablespoons margarine -at room temperature
1 tablespoon sugar (to give a shinly look)
1 teaspoon salt (to make it crispy)
a drop of yellow food coloring
enough water
enough bananas
oil for frying

Method :

1. Remove the banana skin and slice into two. Set aside
2. Place flour, margarine, sugar, salt and food coloring in a bowl.
3. Pour enough water into the mixture and mix using a whisk till you get a smooth batter. Not to thick and not to runny.
4. Heat oil in a wok. And once it's hot, dip the bananas into the batter and fry till golden brown. Do not fry on low heat to avoid absorbing excess oil.
5. Remove from heat and ready to serve. Yummy to serve with hot soya sauce.

Fasting?

Today, is the 10th of Ramadhan. How time flies. It seems like just yesterday we started fasting. Another 19 to 20 days to go. It may seem long, but the next thing you know, we are going to celebrate Eid...

Anyway, to answer Makcik Kantin's question in the previous entry... Yes, I am fasting at the moment... hopefully will only have to 'let go' just a few days.. ameen... And as for ideas, well, you've asked the wrong person actually. I am just lazy when it comes to cooking. But yesterday I did cook and was well enjoyed by the three of us. As for this entry, I will just post the photos of yesterday's menu...


Yesterday I managed to bake the pineapple tarts for an order. But I think, I must have used the other tart mould and my cookies came out.. the L size and not the usual M size. Gosh... what's happening to me! I am just not feeling like myself lately. Got to do something... HAVE TO!!!

Strawberry Muffins

I am not a good driver. But I am not a bad one either. I do think of others whenever I am driving. I don't think I am THAT selfish. I think I have courtesy when I am behind the wheels.

Yesterday I experienced three situations that really makes me wonder how inconsiderate a person can be! The first incident, hubby was driving. We were about to cross the road (from the third lane) to take the first lane when this one Kancil just drove past us and stopped which makes us stuck in the middle of the second lane. There was enough space for him to move further infront so that we can at least not block the second lane, but did he care? Nope... he didn't move an inch till the traffic lights turned green! As we were about to move, another car behind, a lady driver just hooted at us and shook her head and maybe swearing at us. Very 'sweet' of her to give us that gesture where else we didn't do it on purpose.

And at night, when I went to fetch Syahmi from his tuition, I was struggling to reverse the car out of the car park, just because someone, a lady again, simply parked her car just across my car and not in the proper parking lot. She was in the car. I had to move forward and reverse the car, I think more than 4 times, and did she move her car? Nope! She just sat in her driver's seat and look. Well, I think, it must be very entertaining to see other people struggling! Luckily I was driving Fatin's car, a Myvi. And that also took me 4 times. If I were driving my car, I think, I will just park the car back at it's place and wait for the Majesty to move her car!! Haishhh..... sabar mama sabar, bulan puasa ni... rasa macam nak makan orang je ni .... Astaghafirullahalazim.... sabor sabor....

STRAWBERRY MUFFINS

Ingredients :

180 g margarine (I used Planta)
140 g castor sugar
2 eggs (grade A)
1 teaspoon strawberry emulco
100 ml fresh milk
220 g flour *
2 teaspoon baking powder * (*sift together)
fresh strawberries - cut to chunks (I added)


Method :

1. Cream margarine and sugar.
2. Add eggs one at a time. Continue beating. Add strawberry emulco.
3. Divide fresh milk into two portions and sifted dry ingredients into three portions.
4. Fold flour and milk alternately till finished.
5. Add in the strawberries chunks.
6. Spoon into the prepared cups till full.
7. Bake in a preheated oven at 170 C for 25 minutes. Oven temperature and baking time may differ.

Chocolate Melody

I really don't like it when I am in a lousy mood! Because lousy mood, leads to laziness, moody and all the negative things. Even trying new recipes is not a good thing to do. Had been like this for the past 3 days and that explains my absence from the cyberworld. Even my laptop had a good rest! Haha..

But because I am also known as a stubborn person... mak kata, mama ada pusar dua, tu sebab degil.. tapi degil sket je taw, tak banyak... ahaks... degil bertempat okayyy..... I tried something new yesterday and yes, it turned out to be a DISASTOR! I was fuming! Lucikly I didn't try the whole recipe. So I threw away the mixture and tidied the kitchen. Hubby saw my 'long face' and asked what had happened. I told him that 'my temperature' is sky high! And guess what he has to say? Mama go upstairs and on the air-condition to cool down okay! Hahaha.. dear hubby can still make jokes at the time like that! And guess what.. it actually works! Hahahaha.... I cooled down in less than half an hour!

Ingredients :

120 g margarine
70 g icing sugar or castor sugar (I used castor sugar)
1 teaspoon vanilla essence
1 egg yolk
1 tablespoon milk powder
20 g almond powder (I grinded 20g almond without roasting)
30 g cornflakes ~ finely grinded
160 g flour

To decorate :

Egg yolk
Cooking chocolate ~ melted
100 thousands
(I just deco my cookies with white and chocolate cooking chocolate)

Method :

1. Beat margarine and sugar till well mixed.
2. Add in egg and vanilla essence. Beat well.
3. Add in the dry ingredients, milk powder, almond powder, cornflakes and finally flour, bit a time. Reason being, the amount of flour may vary.
4. Roll to about 1/2 cm thick and cut using a cookie cutter of your choice.
5. Brush the top with egg yolk (I omit this step)
6. Bake in a preheated oven at 180 C for 25 to 30 minutes.
7. Leave to cool completely and dip half the cookie into cooking chocolate and sprinkle with 100 thousands.


CHOCOLATE MELODY

Bahan-bahan :

120 g majerin
70 g gula ising atau gula kastor (Mama gunakan gula kastor)
1 sudu kecil esen vanilla
1 biji kuning telur
1 sudu besar susu tepung
20 g serbuk badam (Mama kisarkan 20 g badan tanpa dibakar terlebih dahulu)
30 g cornflakes ~ dikisar halus
160 g tepung

Untuk hiasan :
Kuning telur
Coklat masakan ~ dicairkan
Manik berwarna

Kaedah penyediaan :

1. Pukul majerin dan gula hingga sebati.
2. Masukkan telur dan esen vanilla. Pukul lagi.
3. Masukkan susu tepung, serbuk badam, cornflakes dan akhir sekali, tepung sedikit demi sedikit hingga memperolehi doh yang lembut.
4. Canai setebal 1/2 sm dan terap menggunakan acuan terap berbentuk hati (atau pun apa-apa saja yang anda suka).
5. Sapukan kuning telur (Mama tak buat langkah ini)
6. Bakar di dalam ketuhar yang telah dipanaskan terlebih dahulu pada suhu 180 C selama 25 - 30 minit.
7. Biarkan sejuk. Celupkan separuh dari biskut ke dalam coklat masakan dan taburkan dengan manik berwarna.

Ingredients :

500 g pau flour (available at any bakery supplies outlet or you can use Blue Key Pau Flour)
1/2 cup castor sugar
1/4 cup corn oil
1 1/4 cup lukewarm water
6g instant yeast (about 1 1/2 teaspoons)

Filling :

I used the readymade red bean paste


Method :

1. Pour water into the BM pan. Add in sugar and corn oil.
2. Add in flour and yeast.
3. Set the BM to Dough setting and leave the BM to do it's job.
5. When the dough is double the size, take it out of the pan and cut to 40g dough each. Make into small balls and leave to rest for 10 minutes.
6. Flatten the dough and place some filling in the middle and cover the filling.
7. Place the dough with the filling on a small greaseproof paper or better still, banana leaf, and arrange it on the steamer. Let the dough prove once again.
8. Steam on high heat for 10 to 15 minutes.

Donuts with Custard Filling

Confirmed, I am someone who will push myself to the max. No doubt! Is that a good thing to do? Well, frankly speaking, I think not! But I still do it...why? I don't really understand myself!

Yesterday I was out of the house almost the whole day... galavanting with dear hubby. Didn't cook for iftar but bought from the nearby pasar Ramadhan. After saying our Maghrib prayers, Syahmi had a quick bite of the Roti John and off we went to send him to his tuition centre. Came back, had our dinner and soon after that, out again doing these and that till it's time to fetch Syahmi at 10.30 pm. Was home by 11pm and had to prepare the ingredients for fried rice tomorrow dawn. Then went upstairs and settled the clothes to be arranged in the cupboard. After that, I ironed a few slacks for hubby and Syahmi's uniforms. By the time I was done with that, it was 12 midnight. Took a quick shower and then only I managed to perform my Tarawikh. After that... MamaFaMi is history!

Thank God I managed to wake up this morning to fry rice for sehri...Alhamdulillah....

I had been wanting to try out this recipe eversince I saw it at Puan CT Delima's kitchen. But I guess, my laziness gets the best of me! Haha... It was only till last week that I managed to fight the laziness (that explaines the punctured blue power ranger photo in earlier entry... hahaha.. just kidding!) and made these donuts. Thank you CT for sharing this recipe with us.


DONUT WITH CUSTARD FILLING

Ingredients :

280 ml water
60g castor sugar
a pinch of salt
2 egg yolks
300g high protein flour
200g plain flour
20g milk powder
1/2 tablespoon baking powder
3 1/2 teaspoon instant yeast
50g shortening

Custard Filling :

1 tablespoon custard powder
1 tablespoon sugar
2/3 cup fresh milk
15g butter
2 teaspoon vanilla essence

Coating :

Enough snow powder

Method :

1. For the dough, I used my breadmaker to do the kneading and the proving. Pour water into the breadmaker pan, followed by sugar, salt and egg yolks.
2. Top it with the dried ingredients except shortening.
3. On the breadmaker and when the dough is just combined, add in the shortening and leave the breadmaker to finish it's job including proving.
4. Once the dough is double the size, remove from the pan and onto a floured surface. Roll to about 1/2 cm thick and cut using your prefered cutter. Arrange on a tray layered with a clean plastic sheet. Leave to rise for about 1/2 hour.
5. Fry the donut on medium heat till golden brown. Remove the donuts onto a kitchen towel to absorb access oil.
6. Make a small slit besides the donut and pipe the custard. Coat the donuts with snow powder.

To prepare the custard filling :

Put all the ingredients except for butter and vanilla essence in a pot and stir with a whisk over slow fire. Stir till the mixture thickens. Remove from heat and add butter and vanilla. Stir well and leave to cool. Ready to use.

Dragon Fruit Chiffon Cake

I still have one more Dragon Fruit given by my neighbour Huda. Lovely dark red colored dragon fruit which will be sad enough to let it go to waste. So I transformed it into something else. DRAGON FRUIT CHIFFON CAKE

Ingredients A :

3 egg yolks
25 g castor sugar
50 g Dragon Fruit meat - grated
40 g corn oil
1/4 teaspoon vanilla essence
55 g self-raising flour
1 1/2 tablespoons cornflour
pinch of salt

Ingredients B :

3 egg whites
1/8 teaspoon cream of tartar
60 g castor sugar


Method :

1. Preheat the oven to 180 C. Prepare the chiffon cake tin. DO NOT grease.
2. In a bowl, whisk ingredients A till well mixed. Set aside.
3. In a mixer bowl, whisk the egg whites till it bubbles. Add in cream of tartar and sugar. Continue beating till the mixture thickens and light.
4. Scoop 1/2 the egg whites into the ingredients A. Fold lightly. Add the rest of the egg whites and keep folding till all the mixture is well combined.
5. Pour into the chiffon cake tin and bake for 40 to 45 minutes.
6. Remove from the oven and turn the tin upside down. Leave to cool completely before removing the cake from the tin using a sharp knife. Slice and serve.
