PLUS Highway & Chocolate Coffee Cookies

Pada hari Selasa malam yang lalu, sewaktu kami dalam perjalanan balik dari Shah Alam, sebelum exit USJ, hubby tidak dapat mengelak dari terlanggar kepingan tayar lori yang tersadai di tengah jalan. Bahagian bawah kereta kami pecah. Dan ini bukanlah kali pertama kejadian ini berlaku. Kos untuk membeli set yang baru atau membaiki kerosakan bukanlah sedikit.

Siapakah yang harus dipertanggungjawabkan ye? Sesuatu harus dilakukan sebelum ada insiden yang tidak diingini berlaku yang boleh meragut nyawa pengguna lebuhraya.

I just made this cookies according to what can be found in my cupboard, hence the not so nice taste. Hahaha.. I said it wasn't nice, Fatin said it's an ok ok, Syahmi didn't say a thing because he didn't taste it but Jid's the only one who said it's nice. Mmmmm.... are you sure Jid??? :P


CHOCOLATE COFFEE COOKIES

Ingredients :

100g butter (room temperature)
100g caster sugar
1 egg
1/2 teaspoon coffee oil
180g flour
20g cocoa powder
1/2 teaspoon baking powder


Method :

1. Mix butter and sugar. Stir just for a few minutes.
2. Add in egg and coffee oil. Mix well.
3. Sift flour, cocoa powder and baking powder into the mixture and mix to form soft dough.
4. Keep in the fridge for about 1 hour.
5. Roll thin and cut using cookie cutter.
6. Arrange on a baking tray and bake in a preheated oven at 150 C for 25 to 30 minutes.
7. Decorate as desired. I made mine into lollipop shape by pusing the toothpick into the dough after cutting using the cookie cutter.

Mandy (Spicy Chicken and Rice)

Story 1 :
This morning when I was having my breakfast with a big mug of coffee, I smiled because I can't help recalling Amelia's entry about her boss and the kopi-o. But one thing about you Amelia, that I must salute is that, you have the power to make your boss 'vanish'! Haha.. ini siapa yang boss sebenarnya!

Story 1 :
I've just finished reading IMAN SURAYA ( InsyaAllah I will write the synopsis in my other blog soon), another lovely Malay novel written by my favourite writer Areila Sahimi. I like her way of writing and so far, I've read 3 of her books. Yess Boss will be next. Will pay the bookstore a visit soon! Meanwhile, I've started reading Pretty Women by Fern Michaels. I think it's gonna be an interesting book to read. Just read like a few 10 pages, and I can feel the heat already! Hahaha...

Last August, my hubby was introduced to Nasi Arab at Saba Restaurant in Cyberjaya by his friends. My goodness, the first time we dined there, we were like addicted to the food. It was so delicious that we kept coming back for more. And during Ramadhan, we made so many trips there.

So last week, I said to myself, why not I just try and google for the recipe and wallah, I hit the jackpot when I landed at Sister Zainab's lovely blog. Thank you for sharing the recipe with us. I appreciate it very much.

When I served the set for dinner, I didn't expect hubby and Syahmi to enjoy them as the Saba Restaurant's rice is much better. It's not the recipe to be blamed but it is totally me, I made a few mistakes along the way. But nevertheless, to me, I am quite satisfied with the rice. When I asked hubby to comment, he said,"Nasi mama ni sedap, tapi tak sesedap Saba la, tapi sedap" (Mama's rice is nice but not as nice as Saba, but still it's nice). That's the main reason why MamaFaMi never stops trying! My hubby will not condemn my cooking but gave me full support. Thank you dearest....

So here, I present you my not-as-nice-as-Saba-Restaurant's Mandy!


MANDY (SPICY CHICKEN AND RICE)

Ingredients :

1 chicken cut into 4 pieces
2 teaspoons mandy mix spice
1 teaspoon salt

3 cups basmati rice
1 tablespoon butter
1 large onion, finely chopped
1 small tomato, finely chopped and removes all the seed
4 whole cardamom pods
6 whole cloves
6 black peppercorns
4 1/2 cups water or chicken stock

Method :

1. Rub spice and salt al over the chicken, place it in a pan, cook chicken uncover until tender and brown about 40 minutes.
2. Sauté onion with butter until tender and brown, add whole spices, salt, rice, water, stir, boil then add chopped tomato, simmer cover, cook on a very low heat for 20 minutes.
3. Serve it with green salad or yogurt with cucumber and mint.

Ingredients :

2 tablespoons cardamom pods
2 tablespoons cloves
2 teaspoons black pepper
1 whole nutmeg
1 tablespoon deride ginger*
4 bay leaves

Method :

Blend or process spices together until finely crushed using an electric grinder.

Note :
*Deride ginger (Powdered ginger):is ground spice made from ginger dried root.

Lontong

Aaaaaaagghhhhh!!!!
During the whole month of Ramadhan, I had never missed waking up for sehri, but this morning, I opened my eyes when the 6 o'clock alarm started screaming! I usually sleep with two phones by my side. One is set to wake me up at 5am and the other one, to wake me up at 6am, 6.30 am and 6.45am... Why so many settings mama? Because mama likes to doze off again after switching off the alarm! Hahaha... so to be on the safe side, I had set more than one. I had left the one set to go at 5am, charging downstairs. Huhuhu... Pity Syahmi, he has just another day to complete his sunat Syawal. Never fear boy, mama will keep you company, tomorrow ya... Hopefully I won't miss sehri again tomorrow morning. Hubby has another 2 days to go. You too, don't worry dear, I'll keep you company... insyaAllah....

Remember my canned cuttlefish sambal? Actually I made that to go with this lontong... Simply delicious to my tastebud! Ahakss... statement poyo...jangan marah.. peace! Thanks to Diana and Che Mat Gebu for the recipe. I made a few changes here and there though and will post the recipe according to how I had prepared it.


LONTONG

Ingredients :

1 onion - sliced
3 garlics - sliced
1 inch galanggal - knocked
2 stalks lemon grass - knocked
1 anchovies cube
1 1/2 tablespoons dried prawns - soaked and pounded
10 piece fresh prawns - I added
1/2 teaspoon turmeric powder
1 cup thick coconut milk
2 cups water (depends on how thin or thick you prefer the gravy to be)
Fuchuk - break to 1 inch piece and soak
Su un - soaked
Salt to taste

Vegetables
1/4 cabbage - sliced
1/2 carrot - cut like match sticks
1/2 sweet turnip (sengkuang) - cut like match sticks
10 long beans - cut to 1 inch size
2 fresh red chille

2 pieces tempe - diced

Method :

1. Into a big pot, add sliced onion, sliced garlic, galanggal, lemon grass, anchovies cube, dried prawns, turmeric powder, 1/2 cup thick coconut milk and water. Bring to boil.
2. Add in all the vegetables and tempe. Be careful when stirring.
3. Add in the su un and salt to taste.
4. Add in the balance thick coconut milk and let it simmer for a while.
5. Ready to serve.

To be served with :

Serunding kelapa - didn't serve
Boiled eggs - didn't serve

Nasi Impit


Canned Cuttlefish Sambal or any other sambal to your liking.

Canned Cuttlefish Sambal

Hello hello hello... a very good Monday to all. Hadn't been updating my blog this long weekend because I had such a busy weekend. Now, exhausted and dreaming for a holiday by the sea or on the mountains... boley gitu?

Last Friday, Syahmi asked if he could invite his friends over, in other words, to have an open house. Since he had never asked this before, the father and I agreed. I thought many would turn up, but only 8 came. So we decided to invite our neighbours as well. Unofficially, I had an open house last Friday! We had a lovely time with our friendly neighbours. Thanks all for coming. I do hope all of you enjoyed the dishes as much as I enjoyed preparing them.

On Saturday, we made a day trip to Segamat to attend my cousin, Zuraida's wedding. Congratulations Ida and Najib. Here wishing both of you a life of happiness, cheer, love, laughs, and good times. Amin.

On Sunday, we went to a friend's open house in Desa Pinggiran. We were with them back then in Sri Lanka. And from there, we went to Bukit Mahkota to another friend's house and stayed there till late. Both the hubbys, will have a never ending story when they both meet, once in a while.

While we were there, I received a sad news. My Ayah Long passed away peacefully. May his soul rest in peace. Al-Fatihah...

Just because I had told Kak Ana, my neighbour, that I am going to cook sambal sotong dalam tin as one of the open house menu, I was determined to look for the Rex Cuttlefish, by hook or by crook. I went to more than 5 shops to look for this fella. Allah had mercy on me, finally I found it at one of the groceries shops and for a price to pay. The funny thing is, whenever I don't feel like buying it, it's always there, nicely arranged on the racks of the shops that I normally go but when I want it, it's just so hard to be found! Haish.....


SAMBAL SOTONG

Ingredients :

1 onion - sliced
2 garlic - sliced
3 tablespoons chillie paste
a bit of tamarind juice
enough water
1 tablespoon sugar
salt to taste
1 can Cuttlefish in soya sauce (I used REX brand) - shred to small slices and discard the soya sauce
cooking oil

Method :

1. Heat oil and add in sliced onion and garlic. Fry till fragrant.
2. Add the chillie paste. Continue frying.
3. Add tamarind juice and stir. If the sambal is a bit dry, add a bit of water.
4. Add sugar and salt to taste.
5. Add in the cuttlefish and mix well. Leave for a few minutes and remove from heat. Ready to serve.

Since I have some leftovers rice, I decided to make some apam for Iftaar. And I was right to choose this recipe as it turned out to be soft and lovely. I made half the recipe and managed to get quite a lot. So I shared some with my neighbour Sae. Thank you to qnq910 of MyResipi for sharing this recipe with us. I reduced the amount of sugar though and it was just right to me.


APAM SNOW WHITE

Ingredients :

3 cups rice flour (I used Teratai brand)
1 cup flour
1 1/2 cups white sugar
11g instant dried yeast (I used Mauripan)
2 cups cooked and cooled rice
*3 cups water

Method :

1. Mix rice flour, flour, white sugar and yeast in a container.
2. Blend together rice and water very well to make a batter of dripping consistency.
3. Pour the rice mixture into the flour mixture and mix well. Cover the container and leave to ferment for about an hour.
4. Prepare the steamer. Grease the plastic cups with a bit of cooking oil.
5. Pour the mixture into the prepared cups and steam for 10 to 15 minutes. You may put a bit of coloring into the mixture if you like.

* Note :
Do not add more water to the recipe as the amount mentioned is just nice. The mixture may look thick at first but after an hour, it'll become runny.

Fried Kue Teow

Made this for mom's Iftar yesterday. For hubby's, Syahmi's and my Iftar, I cooked something new. Rice to be precise but that will be in my next posting as I am just too sleepy to continue typing. I need to take a nap before I doze off while sitting infront of the laptop! Don't laugh! With MamaFaMi, everything is possible!


FRIED KUE TIAU

Ingredients :

500 g fresh kue tiau
1 onion ~ sliced
3 shallots ~ sliceded
2 garlics ~ sliced
2 tablespoons chillie paste (more if you like it hot!)
1 teaspoon Maggi concentrated chicken stock
2 tablespoons tomato sauce
2 tablespoons oyster sauce
enough water
1 tablespoon sugar
salt to taste
2 tablespoons soya sauce
Prawns
Fish balls
Bean sprout
Cooking oil


Method :

1. Heat oil and add in the sliced onions and garlic. Fry till fragrant then add in chillie paste. Let it cook for about 5 minutes or till the chille is cooked.
2. Add in concentrated chicken stock, tomato sauce and oyster sauce. Stir well.
3. Pour in water and add sugar, salt and soya sauce. Let it boil.
4. Add in prawns and fishballs. Let it cook.
5. Add in the kuetiau and stir to mix.
6. Just before turning off the heat, add in the bean sprouts. Stir for a few minutes and ready to serve.

Chicken Soto

Last weekend, we were busy with Jom Raya activity.

1. Thank you to Kak Zuraidah aka Kak Lazni for the invite. She is my hubby's schoolmate and my senior. *wink* Her big table was full of food prepared by Kak Lazni herself. They were all delicious.
2. Thank you to Ida for inviting us to her lovely condo. But we didn't actually dine at her condo but the condo next door aka her 'second house'. Thank you for the lovely time spent with our kuncu-kuncu. So happening, only thing, we miss one of our good buddies right....
3. Thank you to Zai and her hubby Mr Aziz for having us last Saturday night. We enjoyed the chat, and I didn't realised it was raining outside. Infact it rained and stopped twice!!! Hahaha....
4. On Sunday, Ida Bakery and family came by our place. We had a lovely time with such sporting guests as Ida's family. I am very comfortable if my guests are such a sport as them. Thank you for coming and tasting all my cookies and food. Jangan serik datang lagi ye!

But the person that I must really thank is my dearest darling hubby. He is such a sport. He is always willing to go to friends' houses, be it my friends or his. Many of my friends, the hubby is not that willing to go with them to the wife's friend's house. I think I am just the lucky one...

CHICKEN SOTO

Ingredients :

1 piece cinnamon stick
2 pieces star anise
5 cardamons
5 cloves
1 onion * (* ground finely)
10 shallots *
6 garlic*
1 1/2 inch ginger *
4 pieces candlenuts *
2 tablespoons soup powder (I used Faiza brand) ** (mix both powder with a bit of water to form paste)
2 tablespoons kurma powder (I used Adabi) **
1/2 chicken
2 lemongrass - bruised
1 inch galangal - knocked
Enough water
3/4 cup thick coconut milk
1 stalk spring onion
1/2 cup crispy fried onion
cooking oil
Chillie pouch : Enough bird eye chillies wrapped in a clean white cloth.

To be served with :


Rice cubes - boil till harden. Keep aside
Meat balls
Hot soya sauce
Bean sprouts
Fried suhun
Shredded chicken meat
Spring onion
Crispy fried onion

Method :

1. Heat oil in a pot and add in cinnamon stick, star anise, cardamons and cloves till fragrant.
2. Add in the finely grinded ingredients. Stir.
3. Add in the soup and kurma paste, lemongrass and galangal. Stir till fragrant.
4. Add in chicken. When chicken is half cooked, add in enough water, coconut milk and chillie pouch. Let it simmer till the chicken is cooked.
5. Add in the spring onion, crispy fried onion and salt to taste.
6. Once the soup is cooked, remove the chillie pouch from the pot. Place the chillies in a mortar or blend finely in a mixer. Add enough soya sauce and some soto soup. Stir well.


BEEF BEGEDEL (MEATBALLS)

Ingredients :

2 large potatoes
1/2 kg minced beef
3 pieces cream crackers - blend finely
1 tablespoon beef curry powder
1 egg
salt to taste

1 egg
a dash of pepper
salt to taste
oil for frying

Method :

1. Clean the potatoes. Slice to 1/2 cm thick and fry. Pound the fried potatoes.
2. In a bowl, mix well the pounded potatoes, minced beef, cream crackers, curry powder, egg and salt to taste.
3. Take a bit of the mixture and shape into small balls. Flatten slightly. Arrange on a tray.
4. Heat oil in a wok. Beat egg, pepper and salt. Dip the meat balls in the egg mixture and fry till cooked. Remove from oil onto a kitchen towel. Ready to serve.

Oyster Mushroom Soup

OYSTER MUSHROOM SOUP

Ingredients :

120 g oyster mushroom
100 ml evaporated milk (I used IDEAL)
1 chicken cube (I used MAGGI brand) or you can use 350 ml chicken stock
1 tablespoon flour
1 tablespoon olive oil
1/2 tablespoon butter (I used SCS butter)
1 onion - diced
1 clove garlic - chopped
1 piece bay leaf
salt to taste
enough black pepper
Spring onion - for garnishing

Method :

1. Clean the mushrooms, squeeze out the excess water and shred thinly.
2. Heat olive oil in a pot and add in butter. Add in diced onion and chopped garlic and stir till soft.
3. Add in the mushrooms. Keep aside a small amount of mushroom. Stir till the mushrooms turn soft.
4. Add flour and mix well. Pour in the evaporated milk and add in chicken cube together with 200ml water. Let it simmer for a while. Keep stirring to avoid the soup from being burnt.
5. Once the mushrooms are soft, remove from heat and let it cool. Puree the soup.
6. Place the pot of soup back on the stove. Add the balance stock, black pepper, bay leaf and the balance mushrooms. Salt if necessary. Adjust the thickness of the soup to your liking by adding more stock is needed. Let it simmer for a while.
7. Sprinkle with some spring onion and serve with garlic bread.

Fruit Custard Puffs

Had not been doing much experiments in the kitchen. The mood is still on the loose! Oh do come back soon... I miss you.... ahaks....

But yesterday, in the mood or not, I have to do something. My friends when we were in Malawi, two families, said they are coming to our house. So with whatever mood that's hanging on to me that time, I made something simple to serve them. And guess what.. then only I realised, it's all more to western. Even the tea, Tuan Haji Anuar said, tasted like English tea. I just used the GENERAL brand teabags. The menu for yesterday was Fried Macaroni, Garlic Bread, Mushroom Soup and Fruit Custard Puffs.

FRUIT CUSTARD PUFFS

Ingredients :

10 pieces readymade puff pastry (I used KAWAN brand, sized 4" x 4")
Egg yolk - for glazing
Enough Mango - sliced
Enough Kiwi fruit - sliced
Cherries
* or any fruits of your choice

Ingredients : For the custard

1 1/3 cups fresh milk
2 tablespoons custard powder
2 1/2 tablespoons sugar (I added extra sugar because the fruits are slightly sourish)
1 teaspoon butter (I used SCS butter)
1 teaspoon vanilla essence



Method :

1. To prepare the casing of the puff pastry, please refer to photo. Bake in a preheated oven at 190 C for 25 minutes. Preferably, using fan oven for a more flaky puffs.

2. To prepare the custard :
Place fresh milk, custard powder and sugar in a pot. Mix using a whisk over medium heat. Keep stirring till the mixture thickens. Remove from heat and add in butter and vanilla essence. Stir well and cover the pot. Ready to use.

3. To assemble :
Place enough custard in the middle of the baked puff. Arrange the fruits according to your creativity. Ready to serve.

Di saat ummat Islam seluruh dunia masih lagi merayakan Aidilfitri, pada saat ini jugalah puluhan ribu warga Somalia kehilangan nyawa akibat kebuluran dan jutaan lagi terdedah kepada ancaman kebuluran yang sangat teruk.

Beginilah senario terbaru di Somalia yang sedang berhadapan dengan krisis makanan kronik dalam tempoh dua dekad. Krisis kemanusiaan terburuk pada abad ke-21 itu telah menyebabkan separuh daripada rakyat tempatan bergelut mendapatkan bantuan makanan bagi meneruskan kehidupan.

Pertubuhan Bangsa-Bangsa Bersatu (PBB) menjangkakan krisis kebuluran berkenaan akan terus merebak dalam tempoh dua bulan di Somalia sekiranya tiada bantuan dihulurkan.



Berdasarkan data yang dikeluarkan Unit Analisis Keselamatan Makanan dan Nutrisi (FSNAU), seramai 3.76 juta rakyat Somalia terpaksa mengharapkan bantuan kemanusiaan dari segi makanan dan ubat-ubatan.

Disebabkan tidak mampu lagi untuk menjalani kehidupan di tempat sendiri yang sudah kehabisan sumber makanan, majoriti rakyat Somalia sanggup merentas kawasan panas kering dan berkaki ayam di bawah terik matahari yang mencecah 50 darjah celsius ke kem-kem pelarian yang menyediakan makanan.



Malangnya, belum pun sempat menjejakkan kaki di kem berkenaan, segelintir daripada mereka mati dalam perjalanan terutamanya kanak-kanak dan bayi. Cuaca panas dan kebuluran antara faktor utama yang meragut nyawa mereka. Sementara yang berjaya tiba di kem dalam tempoh 24 jam tampak lesu, tidak terurus dan kurus kering.

Dianggarkan secara purata setiap hari, seramai 60 bayi mati akibat kelaparan dan kekurangan makanan berkhasiat, selain kemusnahan tanaman dan haiwan ternakan.

Justeru itu, atas dasar keperihatinan terhadap nasib yang menimpa Umat Islam Somalia, maka Yayasan Amal Malaysia melancarkan tabung kemanusiaan khusus untuk umat Islam Somalia. Anda boleh menyalurkan sumbangan anda melalui akaun seperti tertera di poster.

Suji Salju (ulang tayang)

Resepi ulang tayang. Enjin mama belum panas lagi... suam kuku pun belum. Ini salah satu biskut yang mama buat tahun ini... untuk Cik Suryani Ablah... Resepi je ulang tayang ye, gambar baru, fresh from the oven... hehehe..

Ingredients A :

150g Ghee
100g butter
100g castor sugar
1 teaspoon vanilla essence
1 egg yolk

Ingredients B :

100g cornflakes - grind finely
100g cornflour
50g sugee flour
280g flour (the amount may differ)

For coating :

75g milk powder
25g icing sugar (lessen or omit if your milk powder is sweet enough)

Method :

1. Mix together ingredients A.
2. Add in ingredients B until you get a soft dough.
3. Roll to about 1cm thick and cut with a cookie cutter of your choice.
4. Arrange on a baking tray lined with parchment paper.
5. Bake in a preheated oven at 150 C for 25 minutes (every oven differs)
6. Once baked, coat with the mixed milk powder and icing sugar.
